Delicious Ham and Potato Soup

Yum!! This soup was delicious!! I did make a few changes. I sautéed celery, chopped onions and carrots until soft, I added a tsp of crushed garlic. I then added the chopped ham (I also put in a couple big pieces of ham to cook with the soup and give it some extra flavor). I used chicken stock and threw in the chopped potatoes. I let it cook until the potatoes were tender and the soup had good flavor. I then added half and half at the end to thicken it up a little. When serving, I added some shredded cheese to the bowl. Soooo good!

Zesty Slow Cooker Chicken Barbecue

I doubled this recipe, using defrosted chicken breasts. Put a little less Worcestershire sauce in because it seemed a lot...cooked in the crockpot overnight on low, then shredded the meat. The sauce was very watery, so I poured out a good amount of the liquid out and added a new mixture of bbq sauce, Worcestershire sauce, Italian dressing and brown sugar. Put the sauce back in the crockpot with the shredded chicken and warmed it up, then served on hamburger buns with shredded lettuce and cheese slices. Yum!! Will definitely make again!

Pesto Chicken Florentine

I tried this recipe. I sautéed my chicken breasts in olive oil and garlic, then cut them into thin strips and set aside. I sautéed some sliced mushrooms in a little butter and also set those aside. In a saucepan, I combined the alfredo sauce and pesto- I bought the alfredo sauce in the refrigerated section of the grocery store. I then sautéed the spinach and added it to the sauce. I cooked the penne pasta until al dente, then topped with the sauce/spinach and chicken and mushrooms. I garnished it with some grated parmesan cheese and fresh chopped parsley. Yum!

Awesome Pasta Salad

Made this recipe for a summer BBQ. I omitted the pimentos and added thinly sliced red onions. I couldn't find provolone cheese, so I used cubed cheddar cheese. It was delicious!

Party Punch IV

Made this punch for a Summer BBQ/Birthday party on a very hot day!! Used a large can of Dole Pineapple Juice, a bottle of O.J., doubled the amount of vodka and used one 2 liter of sprite and some grenadine syrup, to give it some color. It was delicious and a major hit with my guests! Will make again!

Marinated Grilled Shrimp

Delicious!! Didn't make any modifications to this recipe, used raw jumbo shrimp and marinated them for about 3-4 hours before grilling. Sooooo good, definitely a keeper!

Classic Macaroni Salad

Made this recipe for a Memorial Day BBQ. As others have suggested, I reduced the sugar amount to less than half. Added shredded carrots, celery, red onions and diced cheddar cheese chunks (I know..sounds kind of odd but it was really good)!

Baby Back Ribs

I used a rub on the ribs, then put a thick coat of BBQ sauce on top and let the ribs marinate overnight. The next morning, I put another coat of BBQ sauce on the ribs. I then cooked them in the over at 325 degrees. I brushed them with more BBQ sauce about 3 times while cooking. Once they were just about done, I removed the foil and let them brown a little for about 20 min. They were delicious!!!

Chipotle Shrimp Tacos

I modified this recipe just a little, based on other reviews. I used 31/40 raw shrimp, marinated them in a large can of chipotle peppers in adobo sauce (discarded the peppers and just used the sauce), a tsp of chopped garlic, juice from 2 limes, a few sprigs of cilantro,2 tbsp. flour and a generous pinch of cayenne pepper. I marinated the shrimp for 30 min, then cooked in a skillet until done. I did not include the bacon or onions. Served the shrimp in soft corn tortillas with avocado slices, cilantro, lime juice and sour cream. DELICIOUS!!!

Best Black Beans

I drained the beans and washed them several times until the water was clear. I then sautéed the onions until tender, then added the garlic. I added the onion/garlic to the beans and some chicken broth, then added the cayenne pepper. I simmered them for about 30 min (omitting the cilantro), then served them. Delicious with the Chipotle Shrimp Tacos and Lime Cilantro Rice recipes!!

Coconut Shrimp I

As suggested by others, I let the batter chill in the refrigerator about an hour before using it. I then dipped the shrimp in the batter and put them in the freezer for about 30 min before frying. I didn't use the entire amount of beer but next time I definitely will, the batter was a little too thick without all the beer. I served the shrimp with sweet and sour sauce and they were a hit! The japanese zucchini and onions recipe is a great side dish to go with the shrimp!

Slow Cooker Spicy Chicken

I don't usually change recipes when I haven't tried them before but I decided to make a couple changes to this one. I used 4 chicken breasts, an entire bottle of salsa, 1 can of tomato sauce, 2 cans of chicken broth, chopped garlic, cumin and chili powder. I cooked it on high approx 4.5 hours, then I shredded the meat and drained put the meat back inside the cooking liquid for about 30 min longer, to give it some extra flavor. Used it to make chicken burritos, it was delicious!

Angel Hair Pasta with Shrimp and Basil

I've tried this recipe twice now and I really like. The only changes I think it needs is a little less tomatoes and to include the tomato liquid inside the can. Without the liquid, it's a little on the dry side and the liquid actually helps form a nice thin sauce to go on top of the pasta. It's delicious with the freshly grated parmesean cheese on top.

Downeast Maine Pumpkin Bread

I make this bread every year and deliver plates of it to my friends and colleages. I usually make the recipe exactly as it is, with no changes. This year I decided to 2 a batch of the normal plain pumpkin bread and then another batch adding a couple cups of golden raisins. It was actually a nice addition and people really liked it!

Alfredo Sauce

Absolutely delicious! Made this for a large dinner party with 20 people. Sauteed some chicken breats and cut them into thin strips and cooked some penne pasta, then tossed the pasta, sauce and chicken together- it was amazing and a huge hit! Will definitely make again!

Chicken Tortilla Soup V

Made this recipe for a soup night with a large group of friends. I tripled the recipe and used twice as much chicken broth as the recipe called for. I boiled the chicken breasts in some chicken broth, then shredded the meat, before making the soup. I also substitued the lemon juice for fresh lime juice, increased the chili powder to twice the amount called for and put the salsa in the blender, so the soup wouldn't be so chunky. I used corn tortillas, cut them into small strips and fried them in some oil, this really made a difference in flavor for the garnish! I also topped the soup with some chopped green onions and shredded cheese- my friend's loved it!

Easy Slow Cooker French Dip

Seared the roast in a pan before I put it in the crock pot, also added about a tbsp of minced garlic. Used 2 cans of Campbells beef consumme in place of the beef broth, to give it a little more flavor. Also used the dry french onion soup mix instead of a can and added 1/2 cup water. Delicious!!

Easy Grilled Tri Tip

I added 1/3 cup light brown sugar and 1 tsp ginger powder to the marinade. Marinated the meat about 8 hours. It was SO good!!

Lime Cilantro Rice

This was a yummy side dish with some Chipotle Shrimp Tacos. I did add an extra tbsp. of butter to the rice with the lime juice and cilantro, it gave it a little more flavor.
