Black-Eyed Pea Salad

This is now a New Year's Eve standard. Most guests turn their nose up but once the first person compliments it, others get up the courage to try and no one has been disappointed yet.

Truly Key Lime Pie Ice Cream

I had to cut this recipe in half because my Krups Ice Cream maker only accomodates 1.5 quarts of ice cream. I agree, it did take longer to set up so I plan on reducing the plain milk again by 1/4 cup after I reduce the recipe. The basic recipe is great and you can change by using orange jello and extract or cherry jello and extract. This was very creamy and I know it will be made over and over this summer. Thank you for an excellent recipe!

Easy Lemon Cookies

Jambalaya Salad

Rhubarb Rolls

I must have done something wrong. The dough was so sticky, I had to keep throwing flour at it just to roll out. Then, I couldn't roll it up once it was full of rhubarb, because the rhubarb kept ripping and poking out of the dough. It should be made on wax paper to facilitate rolling up. I finally dumped everything willy nilly in the 13x9 pan and then poured the syrup over and it came out with a nice crust, but all gooey and sticky and yucky at the bottom. It looked awful. My husband ate the top baked portion with the rhubarb, but even the dogs wouldn't touch the slimey bottom.

Greek Chicken Salad

I cut up my raw chicken and sauted in greek dressing. Then tossed everything together using Ken's Greek dressing while the chicken was still hot. This helped wilt the veggies. When it was a bit cooler,I added 2 cups of Feta Cheese which melted slightly over all. Refrigerated it over night and got RAVE reviews.

Almond Rhubarb Coffee Cake

This was excellent. Very moist! I didn't tell anyone it had rhubarb in it because most people are quick to say they don't like it. Everyone loved this cake.

Moroccan Chicken

We added more carrots, celery chickpeas and zucchini so there would be enough left over for the freezer. I had it over white rice, my husband ate his with steamed potatoes. We will definitely make again.

Plum Good Cake

Yes, it is very moist, however, way too sweet. The next time I make it, I will only use 1/2-1 cup of sugar and increase the flour. I was glad I did not use the glaze because that would have made it even sweeter.

Pistachio Cake III

This was great. It was the first of 4 cakes to go. I put it out with coffee at 9AM and it was gone by 11:30. Very moist. Almost tastes like marzipan.

Bake Sale Lemon Bars

These were quite a hit! I served them to the contractors working on my house and even the ones who don't like lemon liked them. They were all gone in one serving. Easy to make with stuff you always have around the house.

Vanilla Ice Cream IV

This was absolutely the best vanilla ice cream ever. It was better than any soft serve from any ice cream parlor. I have the 1.5 liter Krups Ice Cream maker so I just divided everything by 4 (I used one egg, 1/4 of the pudding package and a whole teaspoon of vanilla. This one is a KEEPER!

Leek Tomato Dish

This was super easy to assemble and make. I made it for a father's day picnic and out of 5 side dishes, there were no leftovers on this one. We sliced the leek the night before and soaked them in a bowl of water to get all the sand out. In the morning, all I had to do was assemble and bake. It was super easy and delicious.

Award Winning Peaches and Cream Pie

The first time I made this, I made it in a 9 1/2 inch standard pie pan. It came out with a real thick gummy crust but the filling was real good. I went out and bought a 10 inch deep dish pie pan and it came out spectacular! You have to make it in the 10 inch DEEP DISH pie pan. It has become a favorite recipe for my family now.

Lemon Bundt Cake

Cake was very lemony. Very easy to make. The soda makes it very light. Delicious just to eat it plain. It does not need a glaze or powdered sugar. It didn't last 2 days in my house!
