Turkey Florentine

Tasted great even with several modifications: Instead of the packaged onion dip I mixed fat-free sour cream and a dry packet of onion dip mix, omitted the onion salt because the dip already has enough salt, and also omitted the butter. Unlike some other reviewers, I thought the amount of spinach was great (although I really love spinach, fresh or frozen), but I did use a little bread crumbs with the parmesan cheese like someone suggested. I also added 1 1/2 cups of thinly sliced carrots (and would consider adding some diced onion or leek) and just mixed all of the ingredients (except the parmesan and bread crumbs) together instead of layering in the baking dish. I was a little concerned about the amount of salt in this dish from the onion dip, but it was very simple and very flavorful despite the absence of herbs.

Snickerdoodles I

Turned out so amazingly perfect looking and tasting I still can't believe it. My husband likes very few sweets that weren't made exactly!-exactly!-exactly! the way his grandmother makes them, but with these he kept coming back for "just one more." I added 1 t. ground cinnamon to the flour mixture and 1 t. vanilla extract to the sugar mixture, but I don't believe either were necessary.

Cabbage Salad

Rarely try recipes this simple, but had extra fresh tarragon and green cabbage on hand. This very simple slaw is pretty good, but wouldn't think of excluding the garlic salt. Used 1 t. fresh chopped tarragon; didn't find it overpowering. Would consider adding shredded carrot and crushed red pepper flakes next time.

Creamy Curried Scrambled Eggs

Delicious! All I did differently was add a sliced green onion; I might also try a little cilantro next time. I had seen other cream cheese scrambled egg recipes (which called for 1 oz. cream cheese per 2 eggs, instead of 1 oz. per 1 eggs as in this recipe) and worried that this recipe had too much, but it was perfect! People that prefer their scrambled eggs very dry and stiff might find this recipe calls for too much cream cheese, but what do they know?!!

Just the kind of recipe I was looking for (to use up some extra anchovies and parsley, but without olives)! I cut the oil in half. I hope to try substituting 1 T. of the white vinegar with 1 T. Balsamic vinegar next time, as someone already suggested. I combined the ingredients in a food processor, but won't next time (parsley was pureed too finely, so not as pretty and doesn't keep as long). Actually, next time, I might pulse all ingredients in a food processor except the parsley (and then stir in the parsley), just to make sure there aren't any anchovy pieces.

Pumpkin Chili

Verbatim except for omitting the sugar, this was just your average very mild chili; the pumpkin puree and pumpkin spice were almost undetectable. Too much tweaking is necessary to yield a chili worthy of having the word pumpkin in the name (so I suggest looking for another recipe if you seek a chili with ever moderate pumpkin flavor); however, this is a decent recipe (omitting the pumpkin pie spice and again, the sugar) if you are looking for a way to sneak in vitamins... although if this were the case you probably would also instead look for another recipe not quite so heavy on the ground meat and heavier on the vegetables and beans. But as for this recipe, you should, at the very least, double the amount of pumpkin puree, pumpkin spice, and chili powder.

Chewy Peanut Butter Brownies

Brownies (no cocoa powder and thicker batter), no; chewy, YES! A great recipe; make a double batch! I added 2/3 c. semi-sweet morsels, which made them much more like PB chocolate chip cookies in bar form. I took them out at (and they were PERFECT at) 25 min (the edges were browning and a knife came out clean in the center); the full 35 min would probably have dried them out. After cooling completely, they cut very cleanly.
