Cake Balls

These taste fabulous but I had a tough time getting the chocolate and almond bark smooth and thin. I even used the tip of shortening and had trouble. Maybe my bark was a cheap brand. But very good alternative to traditional cupcakes, cookies ect for bake sale. They make such an adorable looking treat. They were one of the first treats to sell out.

Sweet Potato Casserole I

This is delicious. I make it every Thanksgiving and Christmas. I have made it a few times just because it is soooo good. Even non sweet potato eaters tried it and liked it. My daughters boyfriend said he was surprised at how good it was.

Chicken Enchiladas II

This was easy and everyone loved it. I used flour tortillas to keep it easy and I also prefer the texture. Will make again. Great use of leftover chicken.

Herbed Pork Roast and Creamy Mushroom Gravy

My family did not like this. I did not use salt or pepper as the recipe said. Everyone said the meat was bland. I followed some of the other suggestions and placed all the herbs and garlic in olive oil and rubbed the meat prior to cooking. I guess I was counting on the soup to be flavorful enough w/o adding extra salt.

Grandma's Egg Custard Pie

I was excited to make this pie and the flavor was good but it never achieved a "cheesecake" consistency that I like. It was very soft like firm pudding. My nanny gave me a secret she mixes a tablespoon of flour into the mix. I may try it next time.

Bolognese Spaghetti Sauce with Sausage (Ground Beef)

The flavor was great but the sauce was watery which made for an unappealing presentation. For the trouble and time I would use a jar before making this again. I like very thick sauce that sticks on the pasta. 3 stars for flavor.

Everyone (even the picky one) liked this. I also grated the apple and omitted the sugar in the gravy. I will make this again since it was a nice change from other ground beef dishes.

Creamy Au Gratin Potatoes

Very good and creamy. To save time I buy pre-cooked and peeled new potatoes in a can. It cuts down on the prep time and no one can tell the difference. I also omit the onion slices and use onion powder instead.

Apple Cinnamon Oatmeal Bread

I make this all the time and everyone loves it. I add chopped dried cranberries and pecans. sometimes I use whole wheat flour also If I have it on hand. no one knows the difference.
