Mexican Casserole

Reviewed: Nov. 19, 2010
We used this as a base recipe... =] Changed the salsa to a can of tomato w/chilis. Added 1 cup of uncooked rice, one whole onion, and one whole green pepper. Instead of black beans we smeared refried beans on the bottom of the pan and layered it up from there with whole grain tortilla shells and topped with tortilla shells and a topping of cheese... We call it "Mexican Lasagna" and it's one of our favorites!!!

Hamburger Pie

Reviewed: Jul. 2, 2009
My husband and I loved this! It's a great weeknight dinner! I only had one can of tomato soup so I used it along with a can of diced tomatos. It made it a little chunkier! I'm making it again tonight!

Ranch Stew

Reviewed: Nov. 30, 2008
This was pretty good. I took the advise from another reviewer when they said it was a little bland and used tomatoes with chiles instead of just plain canned tomatoes. I also used dried onioins and the chipotle flavored Mrs. Dash when I cooked the beef. It gave it a nice little KICK instead of just bland tomatoes and ground beef. We'll definately be having this again, it was soooooo easy!!!

Colorful Taco Bake

Reviewed: Nov. 29, 2008
YUMMY! We really liked this. We LOVE tacos, but this was easier and less mess! We topped with canned tomatos and chiles, sour cream, and lettuce.

Southwest Skillet

Reviewed: Nov. 29, 2008
We liked it. I didn't have any fresh veggies so I used stewed tomatos and dried onions! It was still good. Probably better with fresh ones! We'll definately be trying this again, but with fresh veggies!

Herb Roasted Chicken and Vegetables

Reviewed: Sep. 3, 2008
My husband and I both liked it, and it was sooo easy! I didn't change a thing besides the time to bake it. 50 minutes just didn't seem like enough time. the chicken didn't get cooked all the way thru and the potatoes weren't done either. But we'll definately be making it again, just allowing for more baking time!

Grilled Hawaiians

Reviewed: Apr. 7, 2008
Personally, I liked this idea. It was a great twist to a grilled cheese! My husband, on the other hand, said he didn't care for it. Probably because the pineapple does make it a "soggy" sandwitch! I liked the idea of putting the pineapple between 2 slices of ham, though! I'll definately be trying this one again... although I don't know about my husband!

Imitation Crabmeat Salad

Reviewed: Apr. 7, 2008
I thought this recipe was good... I took the advice of some other ratings and cut down on the dressing and sour cream. I seasoned it with onion powder and garlic powder. I think I would do witout the lemon juice next time, since the thought of lemon juice and sour cream together grossed me out a little!!!

Hawaiian Fish with Pineapple

Reviewed: Mar. 31, 2008
I took the advice of many of the other reviewers and didn't use as much lemon juice and NO milk. I did, however, use orange juice in the bottom of my baking pan and sprinkled lemon juice on the fish itself. I wasn't real impressed by this recipe. I thought it would have more flavor. We did like the pineapple chunks. The weird combination of the spices on the pineapple made them so tasty!

Simply Swordfish

Reviewed: Feb. 20, 2008
I thought this was WONDERFUL! I printed this recipe off and my husband actually cooked it. We both thought it was awesome! The seasoning was just enough to make the swordfish pop! We didn't change a thing.

Ham and Corn Bake - Easy and Yummy!

Reviewed: Jan. 3, 2008
i took a few suggestions from the other reviews and used garlic powder instead of garlic salt. they were right, it's salty enough. and i used 2 eggs instead of 3. it turned out good. not a meal i would serve to guests, but a great weeknight dinner with ham leftovers.

Sweet Ham Recipe

Reviewed: Dec. 31, 2007
i changed quite a bit, but still used the same idea :) i used a can of sprite instead of water, half cup of brown sugar, half cup of oj, and chunk instead of crushed pineapple, and added cherries at the last hour and a half. cooked all day in the slow cooker, and was sooooooo good!

Egg and Sausage Casserole

Reviewed: Dec. 20, 2007
LOVE IT!!! Sunday morning breakfasts in my family are a big thing, and this is quickly becoming a BIG TIME favorite!Make sure you use higher quality breakfast sausage. I bought a generic off brand, and it seemed to be a little too greasy when I cooked it in the casserole.

Slow-Cooker Pepper Steak

Reviewed: Dec. 20, 2007
it seemed like the salt and the soy sauce made it too salty, so next time, i'm opting to hold off on the extra salt. other than that it was good. we wanted a little more flavor, so we put in 2 buillion cubes. served over white rice. it was grrreat!
