About this Cook
I'm married, have been for a lil while now! We live a country life, and eat country food, take care of our animals (horses, dogs, strays, and my husbands friends, when they show up on our doorstep!)
My favorite things to cook
Anything that is comforting and practical. I love making any kind of cookies and big family style meals.
My favorite family cooking traditions
Christmas cookies!!! oh, and just about everything else I cook, I learned from my Grandma!
My cooking triumphs
Prime Rib. YUMMY! I'm the queen of pies! Canning vegetables that last all year!
My cooking tragedies
I'll never tell! (and neither will my hubby, he's the guinea pig for most of my experaments!)

Mexican Casserole
We used this as a base recipe... =] Changed the salsa to a can of tomato w/chilis. Added 1 cup of uncooked rice, one whole onion, and one whole green pepper. Instead of black beans we smeared refried beans on the bottom of the pan and layered it up from there with whole grain tortilla shells and topped with tortilla shells and a topping of cheese... We call it "Mexican Lasagna" and it's one of our favorites!!!

Hamburger Pie
My husband and I loved this! It's a great weeknight dinner! I only had one can of tomato soup so I used it along with a can of diced tomatos. It made it a little chunkier! I'm making it again tonight!
