I used more crab than called, we like our cakes with lots of crab, only other thing I did was second time I made them I ommitted the bread crumbs and used more of the buttery crackers for an outside before frying... both ways were outstanding

Dry Rub for Ribs

Reviewed: Aug. 4, 2009
this is very good rub, I use the rub then bake the ribs in the oven on a rack with apple juice for about 2 1/2 hours on 300. They just fall off the bone.. yummy!

Bacon for the Family or a Crowd

Reviewed: May 17, 2009
Very good, I used a broiler pan so that some of the grease could drip off. Also halfway through I blotted some more grease off with papertowels. The end result was delicious, no more grease splattered pans for me!

Onion Chicken in Balsamic Sauce

Reviewed: May 17, 2009
Overall this recipe was ok. It did make the chicken fall off the bone tender though. Fairly easy to make just a bit time consuming browning the chicken and reducing the sauce. My sauce also didnt thicken up as the recipe stated next time I would use a thickening agent. It was also a bit bitter or vinagary for me. after tasting it I ened up adding some brown sugar to the sauce and that gave it just the bit of sweetness that I felt it needed. With those changes I give it 4 stars.

Authentic French Meringues

Reviewed: Apr. 29, 2009
This recipe is incredible! my mom used to make meringues or as we would call them kisses for Christmas and these reminded me of them! I also added mini chocolate chips to the mix however I think they may have exploded or ran a bit because my meringues had bubbly spots where it looked a bit carmelized. (but still tasted yummy) Anyone have any input on how to stop that??

Chicken Cordon Bleu Bites

these were very good except I did not like the taste of regular ham brought to the dish it was a little bland. Luckily I tried out before serving for Christmas. I actually change the ham to smoked turkey ham and was that good!!

Hasty Chocolate Pudding

Reviewed: Jan. 19, 2009
Ok so I am not a baker and this recipe proved it lol! as easy as it seemed I messed it up twice. I am thinking the first time I didnt microwave long enough, it was more like syrup, so we put it over icecream! and the second time I could build a snowman out of it, it was so thick (maybe too long in microwave this time) At least I was able to thin it down a bit. the taste was great though either way. One of these days I will be able to make a dessert!

PHILADELPHIA Creamy Pasta Primavera

Reviewed: Nov. 22, 2008
very good and easy to make.. and suprisingly not bad for you since I used fat free cream cheese. But I did have to double the cream cheese and broth we like to have more sauce and I substituted the Penne and used Bow Tie past instead. And added red pepper just to spice it up a bit more. Yum!!

Brown Sugar Smokies

Reviewed: Nov. 16, 2008
I ended up putting these on a broiler pan so they were not greasy. I found that most of the brown sugar dropped in the pan and did not stay on the smokies. Next time I will just deal with the grease and let them soak in the brown sugar. It was still good recipe just needed a bit more to it!

Cioppino

Reviewed: Nov. 12, 2008
This was incredible!!! 5 stars!! I did make a couple of changes just based on my preference. after reading reviews I decided to make the broth part a day in advance to let the flavors come out and added a can of clam juice instead of the water and substituted a can of diced tomatoes for one of the stewed tomatoes. Next day I heated up the broth and added two cans of tomato paste (just because I like a bit thicker) and some red pepper and hot sauce for heat. Then added defrosted shrimp, bay scallops, precooked mussels (didnt feel like shucking fresh) two cans of who clams and a 6 oz can of crab meat. and cooked until all was done. Then poured into bowls and topped each with a snowcrab cluster. And of course lots of bread!! Got great reviews thanks for the wonderful recipe! will def do again!!
