OREO Ultimate Turtle Cheesecake

Reviewed: Mar. 6, 2013
I use crumbled thin chocolate wafers for the crust. Great cheesecake. Whenever I make this and send it to the college, the girls on the hall fight over who wants the extra pieces of this cake...

Hash Brown Potato Salad

Easiest potato salad I've ever fixed. I make this and take it to every function. No one can believe it is made from frozen hash brown potatoes.

Okay Banana Bread recipe; came out somewhat dry even with the extra bananas. Still want to find a moist banana bread recipe.

Pretzel Smoochies

Reviewed: Dec. 6, 2012
Made this recipe for a fund raiser at work and it was a huge hit. So I then decided to get a little creative and alternated the Hershey Kisses with Hugs. Sent those off to my daughter away at college and the girls on her floor ate all 200 within 20 minutes of opening the package. Just tried making a batch with Kraft Caramels and a pecan half. Works just as well; only you need to add an extra 45 seconds to the oven time. Melts much better if you use the Wilton Cany melts as opposed to the Hershey Kisses.

Famous Butter Chicken

Reviewed: Feb. 14, 2012
I have made this recipe numerous times. When I don't have the cracker crumbs I have substituted with mashed potato flakes. I have also used pork chops instead of chicken breasts. My kids ask for this at least once a week.

Buttermilk Pound Cake

Reviewed: Feb. 14, 2012
Really great pound cake. I get great reviews on this cake whenever I take it anywhere. It is one of the most requested items from my daughter's friends at college. I have also used it in a layer form for a friend's wedding. It was a huge success. The only change I have made is to increase the heat to 335 to make sure that it is done all the way thru. NEVER EVER substitute the butter with margarine or butter flavored Crisco. Gave the recipe to a friend and she tried that. It was a horrible decision.

Lasagna Stuffed Shells

This is a great new way to look at lasagna. I always make two batches; one for now and one for the freezer. My kids ask for this constantly and will eat leftovers for this one.

Italian Creme Layer Cake

Reviewed: May 25, 2010
I found this recipe by accident and compared it to my Mother's recipe and found that they were very similar. We had an Italian Cream Cake every year for Mom's birthday and this was the first year without her or the cake. It is an excellent cake that is well worth the work and trouble. Be sure to follow the directions and beat your egg whites for several minutes to add extra air to make the cake lighter. I am always surprised that my kids love this cake; especially since they hate coconut.

French Toast Corners

Reviewed: Feb. 12, 2010
Made this on a snowy day when I had my kids as well as some of their friends here for breakfast. I doubled the recipe to make sure I had enough for six teenagers. I had a couple of yolks in the refrigerator so I tossed them in as well. They ate every bite and asked for more. Two days later, my son asked me to make it again for dinner. I think this recipe is a hit.

Creamy Caramel Flan

Reviewed: Feb. 9, 2010
The flan has a good taste but you need to double the prep time. It took about 25 minutes for the sugar to cook and that was on medium heat. I didn't have a 10 inch round pan so I put it in a 9-1/2 inch pie pan and it worked out fine.

Peanut Butter Cup Cookies

Reviewed: Jan. 18, 2010
Good cookie that's easy to bake. Just make sure that you store them in an airtight container. I use parchment paper between the layers so they won't melt or become damaged. One perk for making these at Christmas time, I put them in the garage so that the chocolate will reset. An advantage of living in Northwest Ohio.

Merenges

Excellent cookie. You can also substitute the sugar for Splenda to reduce the carbs. I've also made them adding crushed candy canes for a peppermint flavor or adding some coffee for a different flavor.

Spanish Flan

Reviewed: Jan. 18, 2010
The taste is good but there are a couple of things to remember. Instead of a 20 minute prep time, it was more like 45 minutes and that was just melting the sugar into a caramel glaze. I had to push the heat up to medium in order to get it to melt that soon. You need to put the pie plate on a cookie sheet since it can bubble over while cooking. The other problem is that you have to remove the foil at 60 minutes and check the center of the flan. Mine took 70 minutes to cook because the center wasn't done.
