Chicken Enchilada Soup III

This soup was SO good! I subbed corn meal for the other flour and I do not recommend that! Corn meal was a little too heavy and made the soup too thick. I added more water and it was doable although a little mealy. But the flavor of this soup was amazing! I added a bunch of fresh cilantro to the soup as well and I HIGHLY recommend you do the same. It was the perfect compliment to the soup and gave it such a great added flavor. This just went in the list of my favorites!!

Spinach and Sun-Dried Tomato Pasta

This was fantastic! VERY easy and quick. I didn't have pine nuts on hand, and didn't think we would miss them, but I think that nutty flavor would add a lot to the recipe. I had the sun dried tomatoes in oil from Costco, so I boiled them in broth to get some of the oil off and then diced. I added about 3/4 of the broth to the spinach mixture, then added the noodles and let simmer for about 3-4 minutes and this was perfect. The heat from the pepper flakes and the other flavors co-mingle perfectly!!

Three-Berry Lemon Trifle

This was AMAZING!! I made it for my boyfriends family bbq and by the end of the day, they were asking him when he was going to propose. I used vanilla yogurt instead of lemon so it wasn't too overwhelmingly lemon and it was perfect! I also sliced strawberries and made a really pretty design on top instead of using almonds. This was light and refreshing and BEAUTIFUL. They all kept saying it must have taken hours, when really it took about 20 minutes. Make sure you make it the night before though and let it chill overnight. It lets the flavors really mingle and was SO good!

Tex-Mex Burger with Cajun Mayo

SO GOOD! Everyone loved them and it was a great way to spice up a basic burger! The cajun mayo was a great and easy addition! I make it a lot to put on many different things. This recipe has become a staple in our house!

Pizza Pasta

Very good with a few changes! I added another 1/2 jar of speghetti sc (would have been too dry without). I also added 2 heaping tsp of garlic, and a tsp of italian seasoning. It would be okay without these, but I think they added a lot of flavor. Otherwise, the recipe was really good, easy, and quick! Thanks!!

Meatloaf with Fried Onions and Ranch Seasoning

AMAZING! I made some changes to the recipe, but I don't think it would even need anything changed! I used cracker crumbs instead of stuffing mix because I didn't have any. I also used about 1/2 c. of ranch because I didnt have a packet. I used my food processor to blend 1/2 green pepper, and an onion & mixed that in. I also mixed about 2 tbsp of maple syrup and 2 tbsp ketchup and put that on top for a glaze. I also topped with crunchy onions too because I had some extra. I recommend this! The crunch was great! I did have to cook this about 20 minutes longer than the recipe called for. This was fantastic! A huge hit for all!

'Day Before Payday' Kielbasa and Corn Hash

I really did make this the day before payday! =) I used fresh green peppers and an onion. I also added sliced mushrooms. I sauteed the onions and peppers before hand to get them a little softer. I added a little Franks Red Hot too for some heat and flavor. It did take a little longer for the potatoes to be soft (about 20 min). This was great, and easy, and I will make it again!

Ham Bone Soup

This recipe was DELISH! One of my new favorites! I added some carrots and celery and left out the beans because we don't like them very much. I also did 5 cups of water and 5 buillion cubes, and it seemed to be perfect. Not too salty! I added 2 bay leaves and 2 tsp of garlic too. I let this cook from 630am-7pm on low and it was PEFECT! Thanks SO MUCH for the recipe!!

Marinade for Chicken

WOW. this was phenomenal!! I didn't have lemon juice, so just left that out and marinated chicken breasts over night. Such great flavor even after grilling! This is a new summer staple!

White Chocolate Raspberry Cheesecake

This was AMAZING! I made this for Christmas at my boyfriends house, and my boyfriends dad called me the next day to tell me it was the best cheesecake he had ever had! The only thing I did differently was that I used 6 tbsp of raspberry preserves instead of the raspberry reduction. Great time saver and still DELICIOUS! I cooked for 60 min then turned the oven off and let cool in the oven for another 60 min before refridgerating.

Acorn Squash

This was EXCELLENT! My boyfriend had never had squash before, so I made this and he couldn't get enough. I made it a little differently. I cooked face down in the beginning like the recipe calls for, but then melted butter all over each side & sprinkled cinnamon, nutmeg, and a hearty spoonful of brown sugar on each 1/2. then cooked "meat" side up in oven for 15 min then covered w foil and continued to cook for another 15 min. Came out perfectly!

Pumpkin Stew

YUM! Very hearty and yummy cold weather dish! I made this in the crock pot. Just cooked on high for an hour and a half, then added the pumpkin and some small potatoes and cooked on low for another 3 and a half hours. Thanks for the recipe!

Pork Chop and Feta Skillet

This was DELISH! Next time I will marinate the chops in spices and lemon juice, but this had a lot of flavor. I also added chopped sun dried tomatoes and sliced mushrooms. I sauteed those in the pan for the last couple minutes the chops were cooking, and they added a lot of flavor! Thanks for the recipe!!

Whole Wheat, Oatmeal, and Banana Pancakes

YUM! These were delish and healthy! I added an extra banana and about a tsp of cinnamon, and am glad I did. I think they may have been a little bland without this. I didn't have any of the dried milk powder on hand, so I didn't add that, and didn't miss it at all either. Thanks for the recipe!

Quick Gnocchi

DELISH! I have never made Gnocchi before and this recipe made it very simple! I used the 4 cheese instant potatoes and added some Italian seasoning to the dough to give some added flavor. I just served with a red sauce and this was GREAT! Thanks!
