Melt - In - Your - Mouth Shortbread

Reviewed: Dec. 11, 2007
MMMMMmmmmm. yummy. I don't even like shortbread, but I made this because i was looking for a crust for my lemon bars that was more crumbly and less sweet than the recipes I found. When I took it out of the oven though I tried it and wanted to just eat it plain and never mind the lemon. I am a health nut so I never follow the recipe exactly so I used 1/4 cup Whey protein and 1/4 cup whole wheat pastry flour and then the rest (1 cup) of the white flour. I also use Xylitol for sugar instead ( for those of you trying to cut down on sugar for whatever reason (diabetics, candida, calories, teeth, ect.you cannot taste the difference) After all this it still tasted like a dream. Great recipe!

Microwave Lemon Curd

Reviewed: Dec. 11, 2007
Yummy! Ok, so I actually didn't use the microwave b/c I don't like using it and just stirred almost constantly for about 6 min or so and then poured it through a strainer b/c i didn't want the zest in there. I also subbed Xylitol for half of the sugar. It was soooo easy and wonderful! Thank you!

To Die For Blueberry Muffins

Reviewed: Dec. 11, 2007
Wonderful, but IMO it makes too much topping and it over powers the yummyness of the actual muffin. I loved the muffin part and will make again with a fraction of the topping. I also subbed in Whey protein just under 1/4 c for an extra boost and made the sugar with half xylitol. Then of course I added about twice as many blueberries :). I am ashamed to say I used defrosted frozen and patted dry ones and I know fresh are better but I just couldn't afford them! Great recipe! Thanks

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 26, 2007
these were good, I followed the recipe exactly, but my guests and I all scraped off the mound of topping after trying our first ones and getting a HUGE mouthful of cream cheese. If I make these again I will keep all the ingredients the same and half the amount of cream cheese. It was overwheming

Crackle Top Molasses Cookies

Reviewed: Dec. 26, 2007
very yummy. The only reason i'm not giving them 5 stars is they were too "cakey" but i served them with vanilla ice cream and they soaked it up...soo yum. Next time i might add more ginger, just as a personal preference

Lemon Chicken II

Reviewed: Jan. 13, 2008
ok, sorry, maybe it's me. The batter didn't stick and made just clumps of batter in the wok. I had to add another tablespoon of corn starch to make it anything like a sauce. The chicken with it's marinade tasted weird. I don't think i'll even bother trying again.

Extreme Chocolate Cake

Reviewed: Feb. 18, 2008
Ok, so like everything...i completely alter the recipe. I made my own icing. I subbed some wheat flour and whey protein for the regular flour and some Xylitol for sugar. All of these subs and still a rockin' chocolate cake....yummy!

Peanut Butter Cups

Nice. I used fresh ground almond butter and it made the filling very much like a reeses texture. I agree on the no vegetable oil and cooling between layers. quite yummy, quick and simple....=dangerous

Wild Rice with Rosemary and Cashew Stuffing

Reviewed: Dec. 4, 2008
wonderful, I made this for Thanksgiving since my guests couldn't have wheat. It was very tasty. I used it as a side dish and did find that I had to cook the rice for a LOOONG time, about an hour and 15 min, but I'm also at a very high elevation. I will make it again.

Scallops with White Wine Sauce I

Reviewed: Dec. 8, 2008
i followed exactly and mine curdled...:( we ate it still not wanting to waste all that yummy stuff, but even the flavor was weird. We added salt, pepper and garlic and it didn't improve the flavor much. Sorry!

Hot Milk Sponge Cake I

Reviewed: Jan. 24, 2009
awesome! I was skeptical, but I wanted a cake that i could make with a cream and this was perfect. I didn't put on the topping, but I doubled the batch for the cake and covered each layer with pureed mango and frosted with homemade whip cream. I called it a mango twinkie cake. Fantastic! Thank you

Baked Kale Chips

Reviewed: Feb. 11, 2009
very tasty. I will make again, but with a few changes. I needed to bake mine longer, at 15 min they were still soggy in the middle. I had to almost go to 23. I will also use less salt. I found them very very salty and i love salt. I appreciate the recipe. It a great, fun way to eat a healthy vegetable that i usually cringe when eating.

Warm Flourless Chocolate Cake with Caramel Sauce

Reviewed: Feb. 5, 2010
ok, this may actually be a 4 or 5 star recipe, but this is my review for the first time making it. After looking back at some of the reviews, I think I over beat the eggs into the cocoa/sugar mixture as the cake turned out granular and dry. The sauce was not really carmel-y, but i may not have waited for it to be a dark enough amber. I will try this recipe again and omit the sauce as I think it's better with ice cream anyway. The flavor if not the texture was superb however, which is why I am going to try again. Thanks for the recipe!

Jacksonville Carrots

Reviewed: Jan. 16, 2011
yummy! I used dried parsley because it is what i had and agave instead of honey. The only issue i had was shredding the carrots after they were cooked. I think perhaps i cooked them a tad too long because it was just too hard to hold onto them over the grater. I ended up partially shredded and chopped. The flavor was perfect. thanks for a great recipe!

So delicious! I doubled the recipe, added a tsp of almond extract, some sliced almonds on the top and subbed some almond meal for the flour. I made it three times in two weeks!
