Orange Slice Cookies II

~I recently made these because the recipe sounded interesting. The hardest part was cutting up the orange slice candies (i doubled the recipe to give these away for Christmas cookies) & it seemed to take forever. Other than that, they came out just fine..The texture of the cookie was kinda thin but were chewy & good. TIP~Unless you really LOVE the orange slice candies...this may not be the best recipe...I will probably try this recipe again down the road, but will make it with spiced gum drops. (the orange slices were just too much for me..) Still a great recipe!

Chewy Coconut Cookies

I've made a couple batches of these recently for Chrismas cookies..I absolutely loved the taste of these & they don't last very long in my house! I would receommend definetly 'doubling' the recipe as the normal recipe won't make much. I followed the original recipe to the tee both times (the only thing I didn't like was the fact that the cookies are rather flat) Next time I will follow the other reviewer's advice & add an extra 1/4 C. flour to the mixture & maybe a little more coconut? Here's a tip I used to get them to have a nice round shape after baking. i still do the 'teaspoonful' for the cookie, but roll them into balls, then flatten them just a tad before putting them in the oven. They have a much better appearance this way. Good cookie w/a buttery flavor & not overowering w/the coconut..very chewy & good! Love these..

Sugar Cookies with Buttercream Frosting

~This is by far one of the best sugar cookie recipes I've ever had any luck with. I normally don't have much luck w/rolled sugar cookies (as the dough is always the wrong consistency..) i followed the recipe to the letter & they turned out PERFECT!! Afer chilling the dough, it was rather hard (don't let that scare you though, after working w/it for a few minutes it was fine!) I am making these again today & will let the dough sit for 5 mins or so after chilling so that it's easier to work with. I did the xmas cut-outs..they turned out great..I did read the review on these & the frosting prior to making them & I personally loved the frosting that goes w/these! It was a little thick & very sweet (plus there was lots left over..) But i always like my sugar cookie frosting to be that way..To the other reviewer that said that these turned out like 'dry biscuits'...must've done something wrong or not frosted them..I'm not an 'expert' baker, just an 'average' one & these were by far 'bakery' style cookies. I will use these for lots of differrent occasions now!! So glad I found it!

Caramel-Pecan Pumpkin Pie

~This pie was very easy to make but i think the cook times are wrong for the pie? It definetly takes more than 40 mins. to bake..Pumpkin pies normally take about an hour. I followed this recipe exactly (& i have a very hot oven & nomally have to 'shorten' my cook/bake times) but it seemed to take forever to bake this one. Had to keep re-setting the timer & checking on it...It took well over an hour to finish it up.

Deluxe Mashed Potatoes

~Very quick & easy to make. it kind of had the taste of twice baked potatoes but without all the time & effort. You could also embellish this to suit your tastes..Next time I will try it w/cheddar cheese or bacon bits..Very good recipe though!!

Barbecued Meatballs

~This is a just a good, basic recipe (great for when you're in a hurry, or if like me~was looking for a new, quick, kid-friendly idea for dinner..) The meatballs are made the same way I'd make them w/spaghetti (just made them smaller-cocktail sized) I put b-b-cue sauce on top of them while baking them for the 1st part (on error) It was fine though..just let them bake for 35 mins, then transferred them to a crock pot & marinated them in more b-cue sauce for a few hours to get them real flavorful..I used 'Bullseye' sauce (it's what we had in the pantry..& were very tangy & yummy!) I would probably try Jack Daniels sauce next time~just for something different. I made these w/cheddar mashed potatoes & a veggie...Delicious & simple!!

Buttermilk Biscuits

~I just recently started making my own homeade biscuits (this was 1 of 3 recipes that I've tried recently..) I've been trying to duplicate a recipe that comes close to 'Cracker Barrel's' biscuits & this is probably the best. In my opinion~they taste even better than theirs. I've never had any luck w/rolling out dough, but I've finally mastered it~this recipe is quick, easy & the biscuits are super fluffy (the buttermilk makes it..also the 'Butter Flavored Crisco' too) I doubled the recipe & used a flour-rimmed glass (have to buy a biscuit cutter now..) to cut them & placed one biscuit on top of the other (I also put a little pad of butter in between the biscuits) This way they pull apart easily & the presentation looks great too.I have a very hot oven & lining the baking sheets w/parchment paper is a big help too (nothing worse than a biscuit w/a bottom that is too dark..) My family loves these & so far this is my favoirite biscuit recipe!
