Ranch Dressing II

The best homemade ranch! I did use just a little less sour cream, and added some buttermilk to compensate/thin it out. I feel like it would be super thick if made without some buttermilk. But delicious and so easy!!

The Best Banana Pudding

Very good banana pudding! I didn't use the entire can of condensed milk - maybe 2/3 of it. And it was PLENTY sweet. Also, I used fresh whipped cream, just because I prefer the flavor to Cool Whip. Very easy!

Amish Macaroni Salad

Overall, this was pretty tasty for macaroni salad. However, I only used about 1 tsp of sugar. I feel like the dressing could have used a little more flavor... it really just tasted like mayo & mustard.

Orange Cream Cheese Frosting

The flavor of this icing was quite good - the orange really adds a nice zip. However, it's quite thin. It's not the consistency I was hoping for when I think of cream cheese frosting. I added some more cream cheese, and that helped. Just keep in mind that this is very sugary - not butter or cheese based like many. It would definitely be great for icing cinnamon rolls or drizzing over a bundt cake..but the texture just didn't work well for frosting an entire cake.

Asian Lettuce Wraps

This is an awesome recipe! Thanks Rachel for the perfect lettuce wrap recipe that I've been searching for! I used low fat ground chicken in place of the beef. They were so full of flavor. My husband & I scarfed them! Very much like PF Chang's version, but they tasted much healthier and lower in sodium. Just fabulous! I did make the Oriental Dipping Sauce also on this site to use as a condiment. It was a nice complement.

Spinach Stuffed Chicken Breasts

This is a very quick, easy, delicious weeknight recipe. Like some of the other reviewers, I baked the chicken, covered, at 400 degrees for about 35 minutes. Then, I placed it under the broiler for about 3-5 minutes per side, just to crisp up the bacon. The chicken was very tender and juicy! The only change I made was to add 3-4 chopped sundried tomatoes to the filling. They made a delicious addition.

Tart and Bubbly Wedding Punch

This is my absolute favorite punch recipe! I've made it for company parties, baby showers, etc. I love that it's not overly sweet, like many Hawaiin Punch type punches are. Very pretty pink color too!

Chicken-Avocado Tortilla Soup

Very quick, easy, delicious soup! I used diced tomatoes with jalapenos, which probably made it just a little spicier. Just a few tips: Make sure you cut the tortilla strips THIN (recipe says 1/8th inch). This is important for them to dissolve properly. Some of mine were a little thick. Also, do not skip the cilantro. It adds a lot to this soup!

Coconut Shrimp I

Overall, I thought this was a very good recipe. However, I used large shrimp, and they got very brown before the shrimp were fully cooked. I also processed the coconut for just a few seconds in the food processor just to help it coat the shrimp better. Very good overall taste! And much easier to make than I expected.
