Marrakesh Vegetable Curry

I literally licked the dish after I finished my portion. So it was a good thing we didn't have company over. Made it with only one substitute - cannellini beans in place of the garbanzo. Amazing blend of flavors!

ABC Vegetable Soup

very tasty and yet i did make a few adjustments according to our taste and what was available in the kitchen. i had rice pasta shells instead of the alphabet type. i sauteed a little red bell pepper & then a little minced garlic as some of the mixed veggies (mine were fresh celery, frozen peas and frozen green beans) and lastly i added a bit of dried parsley. yummy - thanks.

Nepalese Scrambled Eggs

Very nice. I love curry and we both like eggs - so this was a great new recipe. I used sweet onions and eliminated the coriander. My curry is a homemade dry blend so I only put 1 tablespoon and that was just right. Didn't use the cilantro either.

Baked Eggplant Sandwiches

These were so delish! It did take me a long time to make. Longer than the prep and cook time, but I think I'm slower and more meticulous than some people. The adjustments I made were minor, but for other cooks I'll list them. I made mine for 3 servings - used 1 cup of quinoa flakes since I only had 1/2 cup of panko - this was a very good addition. I used dried basil and did reduce salt by 1/2 teaspoon, which I thought was just right. My provolone cheese was not the sharp kind - it was the smoked kind. The pomegranate molasses is a very nice flavorful touch and the recipe for making some is on this website. It lasts in the refrigerator for a long time [kind of like simple syrup does.] I had a great beer with it Blanche De Bruxelles - Biere Blanche White Beer. Yummy! Final note - this tastes close to a wonderful sandwich we have eaten at a local Mediterranean restaurant called Cafe Rakka in Hendersonville, TN - which was featured on "Diners, Drive-Ins and Dives" back in Oct. - except theirs is on pita bread. Again amazing - thank you Joenaujokas.

Simple Coleslaw

Evelyn Gebhardt liked your recipe. Our company's comments were good. Thanks for the tips, other reviewers- like tizzyliz. I refrigerated it for a few hours before serving. Then I took it out to get closer to room temp. before serving time.

Spicy Garlic Salmon

A winner way to make salmon. I used 2 chilis and lemon (didn't have lime), mustard was dijon & took extra time to mince the garlic, since I don't have a m & p. Thanks for this recipe Napur. Also thanks for the tip from Jet'sMom - I cooked it for 18 minutes - it came out just right. Those who like strong flavors rather than delicate ones will appreciate this dish.

Kale and Adzuki Beans

Made this and had to leave out the coriander because of my husbands intolerance to this seasoning. The reason I wasn't pleased with this dish was because it was too dry, especially the beans. I took the advice of others and did the boil, drain then refill the water and even cooked them over 30 min. and used the soy sauce rather than tamari still not a worthwhile dish. Did incorporate this dish into a soup so not to waste the food.

Italian-Style Quinoa-Stuffed Sole

This dish was a nice combination of flavors. My husband said "wouldn't have expected quinoa in an Italian dish, but it went very well together." I did substitute Pangasius instead of Sole, which is a good alternative, I read on a site. The quinoa I cooked less time than was given - medium low, otherwise it would have scorched. My herbs were dry rather than fresh, but that was not a problem. I just did the dry to fresh reduction. Also my vinegar was apple cider - didn't have red wine. Due to the thickness of the fish and quinoa I did have to take it out of the oven after the 4 minutes and carefully flip it so the other side would cook in the broiler. All in all a good healthy meal! Thank you.

It was a recipe that I wanted to make and upon first hearing of the name my husband said - "nah, I don't think so." After I read out the ingredients he said sounds good & I went with it. Now he says "it's a five star."

Jalapeno Soup

Yes, mine did separate too. So it was not attractive, but it still tasted fine and wasn't to hot for us (well one bite was for my husband). The soup did gain a little more heat as leftovers. It is a rich soup - due to all the cheese, but that's what makes this soup. I rate it a three not because I didn't care for it, but because it wasn't something we want to make over and over again.

Lentils and Rice with Fried Onions (Mujadarrah)

This made a great meal. I enjoyed cooking it partly for the fewer ingredients involved and the taste was just right. (I did add about a 1/4 teaspoon of cumin toward the end of the cooking time.) Plus my rice was already cooked so I just put the hot lentils on top the rice. Thanks for the recipe.

Drunk Deer Chili

Oh yeah - this was a winner. I loved the spicy and smooth flavor of the sauce. In fact mine was more saucy due to my not putting all the meat that it called for. I used venison sausage which was the ground meat with seasoning. Made it with a different type of pepper than the jalepeno and learned a big no-no. Cutting a pepper with bare hands is bad. Because even hours later, many hand washes & soaking my fingers in buttermilk didn't get rid of the sting. Then taking out your contacts later is even more painful. [I can laugh now, but it hurt at the time.]

Curried Mustard Greens with Kidney Beans

Schwang! This dish was like 'ol South marries Indian. We liked it. Instead of half and half I used lite coconut milk and did take the advice from above and added some garlic. Also I used 1/2 tsp. of powdered ginger in place of fresh. Nearly made the error of using scallions instead of shallots - because here in the South we say green onion more often. This shows I'm still learning.

Steamed Egg (Chawan Mushi)

This was quite nice, simple flavors that blended well with each other. I made a substitution of the sake with zinfandel. In my bowl I used turkey and in my husband's chicken. Also I threw a bit of green onion on top with the parsley.
