Irish Soda Bread

A-MAZ-ING. Super easy, usually have most ingredients on hand (gotta remember to keep buttermilk in the fridge) and really tasty. Can't beat it for toasted breakfast bread although it is good as a side to a hearty soup or stew also. Here is how you deal with the sticky factor: scrape into your generously greased baking pan, spray entire top with cooking oil spray, lay a piece of plastic wrap over it and mold as needed. Remove plastic wrap, sprinkle with flour and make cut using a wetted sharp knife. Pop it in the oven. Return in an hour+ for mouthwatering goodness.

Marinated Carrots

Just wanted to say that these are called copper carrots in my neck of the woods and were served cold at my wedding reception 33 years ago. An oldie but a goodie.

French Toast Casserole

This recipe is a great take to brunch dish. Last year I served it Christmas morning, used King's Hawaiian bread and added finely chopped apple and rasins. It was like eating breakfast and dessert at the same time. IMHO it doesn't need the maple syrup, but who would turn that down if the opportunity is there to have it.

Mediterranean Onion Dip

I sent this to a party with a friend as I had to arrive late and everyone was trying to guess what was in it before I arrived. I was attacked for the recipe when I came in. The guys especially liked it. I'll be making it again. I kind of messed with the ingredient amounts as I am not real into measuring and it turned out great.

Thanks goodness my printer malfunctioned the first time I looked at this recipie. I followed the revised instructions exactly and the result was a very nice cookie, not too sweet, not too spicy, not too chewy... just right. Thanks for sharing it Angie.
