Red Velvet Cookies

Wow- these are crazy good! I made my cookies twice as big and they were unbelievably soft and just perfect. I lined my baking pan with foil so I could have the cookies set once out of the oven and place the next batch right in the oven to waste precious baking time. Plus- no clean up afterwards:)

Extra Easy Hummus

This was an awesome recipe for hummus without the tahini! I enjoyed making it (nothing easier than putting all the ingredients in a food processor!) and my guests enjoyed eating it:) I did add some lemon juice and pepper as others wrote because the cumin taste was overpowering to me. No one else complained.

Potato and Cauliflower Casserole

This was very good- however not very good for you. I made some substitutions- 1% milk instead of heavy cream, cut the butter down by half, used reduced fat shredded taco cheese (all I had in the fridge- added some color and tasted great). Will make again:)

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

Awesome cookie recipe! I used half white and half wheat flour and they baked beautifully. Brought batches to three different 4th of July picnics and they were the first dessert to be gone at each of them.

Steamed Squash Medley with Sun-Dried Tomatoes

Great idea to mix the sun dried tomatoes with the squashes! I mixed all the ingredients together and placed in a ziplock steamer bag to save on prep time while the main dish was baking. The tomatoes added a nice flavor to the squash.

Suki's Spinach and Feta Pasta

I realized when I started making this that I forgot to buy pasta- and it's great without it as a salad! Next time will try it with the pasta also, but a healthier, low-carb version would be to skip the penne:)

Curried Cashew, Pear, and Grape Salad

Wow- this was a very good and different salad! I made it twice, once with the required ingredients and the second time with 1/4 of the butter in an attempt to make it more healthy. You need the butter! It cuts the vinegar and spices just perfectly enough. Wonderful salad- not many times you can day that.

Lemon-Maple Butternut Squash

I loved this recipe so much I made it again three times this past month! The syrup and lemon more than provide enough flavor that I was able to cut back on the butter to make it healthier.

Butternut Squash Fries

I thought these were great but, as I did some changes, I didn't give it 5 stars. First off, it is really difficult (or it was for me) to cut these into steak fries shapes. I put some oil on my baking sheet and then sprinkled the fries with ginger, cinammon and salt- yummy! They didn't need to be drained as some others have commented. Great!

Honey Baked Chicken II

Wonderful! I used skinless, boneless chicken tenders (one-pound pack) and with half the butter and they still came out succulent and moist. Wonderful way to get a great meal using things I already have at home, so I am a big fan! This recipe is a keeper:)

Cocoa Oatmeal Cookies

I tried these out, as others mentioned, I had all the ingredients already and was itching to make something yummy. Wow- exceeded my expectations! I was told these were the best cookies I've ever made! I did the 1 cup whole wheat flour and 1/2/ cup white flour to make it a little "healthier" and added the 2 T of pb for some more flavor. For some reason (I'm thinking it's my oven), I ended up baking these for 15 minutes per batch. Wonderful cookies!!

Curry Broccoli Salad

I've never made a broccoli salad before and prepared it for a Mother's Day picnic- it was a hit! The only suggestion I heard (keeping in mind the audience of women who aren't big fans of spicy food) was to use half the amount of hot sauce. Yummy!

Asian Turkey Burgers

This is a fantastic recipe! I made them once for my husband, Mr. Beef, and he loves them so much he wants them for our Valentine's Day dinner tonight. Very moist, flavorful and great without the roll. I also used ground ginger and light soy sauce (I doubled the amount).

Snickerdoodles IV

When Christmas baking with my mom as our tradition, she made a face when I said I brought Snickerdoodle dough. She was singing a different tune after she ate one! I put the cinnamon and sugar mixture in a ziplock baggie and dropped the cookies in there so it was less messy. Wonderful!

Lower Fat Banana Bread II
