Gluten-Free Strawberry Shortcake

Very easy recipe! I had to modify since I didn't have everything on hand. I used 2 cups of King Arthur's GF All Purpose Baking Mix rather than mix all the flours and starches together... And then I used coconut oil in place of the shortening. VERY GOOD. I started tasting it while it was still warm and it was hard to stop! :) I made this for my hubby's birthday cake and he loved it.

Spicy Chicken Rice Soup

As is, I give this recipe 4 stars. It is a very good soup, but it is made better quite easily... In my opinion, it hops very quickly to a 5 star soup by using some whole chicken thighs instead of precooked chicken... and tossing them in with a little more broth, all the other ingredients (minus the rice) plus a little salsa. Let them all simmer until the carrots are getting tender... THEN add the rice and let simmer until it is toothy. We all know that rice is going to soften up as it sits after cooking. Dip out and shred the chicken after it's done. It was ten times better this way. Very good base recipe, but even better if you have time to use fresh chicken.

GLUTEN FREE Pumpkin Pancakes with Nutmeg Whipped Cream

OK, Let me preface this by saying I am NOT one of those folks who's usually going to change a recipe and then review it according to my changes, BUT I wanted to make this SOOOO bad and have to follow a Gluten Free Diet, so here goes! I made this using King Arthur Flour's Gluten Free Pancake Mix. Using that, I could see by the box that I might need a bit more liquid than was called for in this recipe, so I upped the pumpkin to 2/3 cup. WOWWWEEEE!!! WHAT A GREAT PANCAKE!!! This stuff was AWESOME. Cooked up SO easy, PERFECT consistency, and totally cured this GF Girl's craving for a short stack. THANK YOU! for a great base recipe for me. :)

Chicken and Corn Chili

I literally had all the ingredients in my slow cooker in 7 minutes flat... WOW. Now THAT is a quick meal. And this chili is SOOOOO good stuffed into tortillas with some lettuce and sour cream. Heavenly! Thank you, Sarah Jane, for such a great quick meal. Perfect for this busy working woman!

Soft Sandwich Buns

These were so good as Hamburger Buns for our supper last night... Not sure what that one bad review meant by them being too sweet... They were PERFECT and so easy! The ONLY thing I did differently was cut them a bit larger so they'd fit the big patties we made. Thanks Lesa for a great recipe! :)

Soft Giant Pretzels

Yummy, chewy pretzels! And they were pretty simple, too. I added maybe 1/3 c extra flour to the bread machine and they weren't hard to work with at all. I gave this 4 stars because by itself, it's just so-so. It's really whatever you put on top that makes them kick butt! I used a butter, brown sugar, honey glaze and added a little salt to them before covering either in cinnamon sugar or chopped almonds. My menfolk tore them UP!

Blueberry Sour Cream Coffee Cake

Made this last night for my hubby and coworkers and they ALL had a fit! The coworkers cleaned off the plate in minutes. I followed the recipe just as it is and it was AMAZING. SO dang moist and just a tiny bit crisp in all the right places!

Grammie's No-Crust Apple Pie

I thought this recipe was GREAT. I had a bunch of apples and company over spur of the moment... Got on here and found this recipe really quickly, threw it together in just a couple minutes, and tossed it in the oven while I was fixing dinner. Was ready just as we were finishing dinner... Took the suggestion of exchanging the sugar for 3/4 cup brown sugar just because I like brown sugar better as a rule. Tasted awesome and the topping was REALLY yummy. Offset the filling PERFECTLY. Great recipe and I will DEFINITELY make it again. The menfolk gobbled it up after a long day's work with some homemade vanilla ice cream.

Clone of a Cinnabon

Perfect recipe as is - I've made them 4 times in 3 weeks and I can't keep them. Today I sent them with my son to school for his last day of kindergarten - he said that some of the kids liked them. I said, "Some?" He said not everyone got one. I asked why and he told me that the teachers liked them best of all the party food and only let the children who behaved best have one and then they split the rest. Yes, I believe that says it all.

Japanese Shrimp Sauce II

Bran Flax Muffins

I chose this recipe b/c of all the reviews that said substitutions would still yield a great muffin - that was so true! I ground some oats and used that instead of the bran and they were just so good! I also used a wheat-free flour blend and the consistency was still great. My hubby and 5 yr old both loved them and I can't wait to pull them out for breakfast in the morning!

Grandma Johnson's Scones

This is the first scone recipe I ever tried - 5 years ago for a Christmas tea... It is awesome and absolutely the yummiest, tenderest scones come out of the oven. I have made it with several variations, but the one my son lives best is blusberry.
