Chicken Fajita Pizza

This pizza was delicious and easy to make! I made my own my crust instead of using a refrigerated one. I will definitely be making this one again!

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

This was delicious!!! I followed the recipe exactly, except I cooked my steak on the stove (it looked like rain). I have only recently begun cooking flat iron steaks, but they are so tender and delicious. This recipe was by far the best I have tried. The blue cheese-chive butter is also delicious on sliced baguettes! Thanks for sharing this recipe!

Lime Chicken Soft Tacos

This was really good. Next time, I am going to marinate the chicken before cooking it (at least an hour or so) because the flavor wasn't strong enough. Thanks for sharing! :)

Feta Cheese and Bacon Stuffed Breasts

This chicken recipe was divine! Like others, I halved the oil (it just seemed like way too much) and increased the lemon juice. I also pounded the breasts before I stuffed them. This one is definitely a keeper. Thanks for sharing!! :)

Feta Chicken

Easy and delicious recipe! I sprayed the tops of the chicken to brown the crumbs. It is easy to change the flavor of this recipe by varying the flavor of the feta cheese. Thanks for the great recipe!

Pico de Gallo Chicken Quesadillas

I followed this recipe exactly, with one exception: I used Mexican blend shredded cheese. It was delicious! I love the pico de gallo sauce. The sour cream and pico de gallo sauce topping completely made the dish. Thanks for the great recipe! I will be making this again

Simple Southwestern Chicken Salad

This was delicious! I cut back the mayo and used fat free. I added green onions, and used 1 T. of taco seasoning (homemade recipe from this site - Taco Seasoning I). I wrapped in a tortilla as suggested by others with lettuce and cheddar cheese. Delicious and healthy lunch! Thanks!

Taco Seasoning I

This seasoning mix made the best tacos ever! No more seasoning packets for us! I used 2 tablespoons for every pound of ground beef, but it wasn't quite spicy enough. Next time, I will try 2 1/2 to 3 tablespoons. Thanks for sharing!

Bacon and Cheddar Stuffed Mushrooms

These mushrooms were delicious! I substituted real bacon pieces for the cooked bacon, green onion for onion, and 2% reduced fat cheddar for the cheese. It turned out perfectly! I will definitely make these again.

Jalapeno Pepper Appetizers

These are SO GOOD! I made them for a Mexican-themed dinner party and got rave reviews. The only change I made was to mix in 1/2 cup of Mexican cheese (pre-shredded blend). I highly reccomend this recipe!

Cadillac Pimento Cheese

So delicious, it makes the store-bought obsolete! I made the following substitutions to make it lower in fat/calories: shredded 2% cheddar cheese for velveeta, fat free mayo, and lowfat cream cheese. It turned out great! Thanks for sharing!

Three-Step Salad

Yummy! I made this salad to go with steaks and twice baked potatoes. I left out the sugar toasted almonds (in an attempt to cut calories). I really liked the dressing and the mandarin oranges.

Blackened Chicken

Delicious! I used chicken tenders, however, instead of the breast halves. I have a hard time finding breast halves and boneless skinless chicken breasts are little large for every night. I will definitely make this again!!!!

Ultimate Twice Baked Potatoes

These are the best twice-baked potatoes ever! I leave out the sour cream, however, as DH will not eat anything with sour cream, but they are still good. Try microwaving the potatoes as a shortcut instead of baking them in the oven. Also, these freeze really well. Just pull them when you need them to go with a fast meal.

Crunchy Romaine Toss

This is the best salad ever! My mom and I have been making it ever since it was published in a local cookbook. Locally, it is the most popular salad. Inevitably, everyone brings it to a potluck, shower, etc. Even my anti-fancy-salad husband loves it! I always make one and half times the dressing because one recipe just isn't enough. It makes a very large salad, so if I make it for just us (or me!), I store the nuts/ramen noodle mix, lettuce, and broccoli & green onions separately.

Anniversary Chicken I

I made this chicken recipe for DH and his father. They both loved it, and I did too! I marinated the breasts overnight in teriyaki sauce, and substituted low fat Ranch. Those were the only changes. I thought it was a tiny bit salty, so next time I will buy the lower sodium teriyaki sauce. It was delicious! Thanks for the great recipe!!

Pepper Jelly Appetizer

I have been eating this appetizer my entire life! It is BOTH of my grandmothers' standby for appetizers. Everyone loves it! It looks very pretty for Christmas, and it tastes great with Triscuits & Wheat Thins!
