Chicken Pot Pie IX

I thought this was excellent. Personally I think the sauce amount was perfect...maybe the people saying it is too dry misunderstood the measurements?...One cup PLUS 3/4 cup (pretty much one can of chicken broth). I usually make this with leftover chicken from the dinner before, and one time I used a store bought rotisserie chicken. Super easy that way!

Italian Sausage Tortellini Soup

This was delish! The only things I did differently was put in a can of diced tomatoes instead of chopping the 4 fresh tomatoes...I didn't have those on hand. And I added the green peppers along with the carrots so they would cook down a little bit more.My husband and I ate about half and then I froze the rest for a rainy day!

Alysia's Basic Meat Lasagna

I've made this several times and it always comes out a winner! I do use the 1 1/2 lbs of beef, but then add in a few links of broken up hot Italian sausage to give it a little spice. So yummy!

Cocktail Meatballs I

We make them every year as an appetizer for a Christmas Eve party, and they are always gone within minutes. We make them mini sized though...about 45 meatballs. We've used the Crisco to fry, but I'm sure vegetable oil or even baking them is fine! LOVE THESE!

Stuffed Peppers for Two

Very good and tasty! It was nice to make a meal designed for 2 with no leftovers for a change. Made with ground turkey instead of beef, and instant brown rice instead of white just to make it a little more healthy.

Christmas Morning Frittata

Made this Christmas morning and also a regular morning while we had visitors! Very good...a nice change from typical breakfast. Used Italian-style bread crumbs, and served with fruit and toast.Yummy!

Slow Cooker Beef Stew I

I used the "tweaked" version that so many people have talked about, and I'm sorry that I did. It really did defeat the whole purpose of it being a quick and easy crock pot meal, and I did not like the way it turned out. My fault...next time I will follow the recipe exactly!

Kabob Marinade

Very tasty! I added less than the recommended amount of soy sauce, because I was afraid it would be too salty per other reviews. Also, I only had limes on hand so used lime juice instead of lemon juice. It was good, so I think next time I will make it the same way! Marinated cubed sirloin for about 8 hours, and reserved some marinade to baste over veggies on kabobs while grilling.

Tortellini, Steak, and Caesar

Good, and simple. Used bagged Romaine lettuce for ease, and added other things I like in a salad...such as cucumber and green pepper.The tortellini made this a complete, filling meal!

Grilled Fish Tacos with Chipotle-Lime Dressing

This was just OK for me. I think the flavors were too strong for the fish.For the dressing, it definitely seems like it calls for too much adobo sauce...I just added a few teaspoons and it was enough.
