Chorizo and Lentil Stew

I added black beans, spinach and used homemade beef broth. Everyone in my family loved it and it was a very hearty and filling meal!

Perfect just the way it is! But I also love it because it's so versatile, I can add just about anything. Veggies or meat. Made this for my best friend who is really picky and she ate it right up.

Delicious Chicken Casserole

I made this for my boyfriend's family and even his SUPER picky Dad liked it. Made a few changes: I didn't add the butter, added about a half cup shredded cheese (this is for 16 servings), made 2 extra cups of rice, used store bought chicken broth, and I broiled the chicken breast. Everyone raved and had seconds! Will definitely make again and will add veggies next time!

Crunchy Caramel Corn

I just made this and was SO disappointed. There wasn't enough caramel to coat the popcorn and almost immediately it became hard and unmanageable. What little popcorn it did coat doesn't taste that great. I'm going to make do with what I have though. I'm going to combine the bits of caramel popcorn with regular popcorn, M&Ms, pretzels, and maybe some walnuts and drizzle the whole mixture with white chocolate and put it out for the party tonight.

Tequila Lime Burgers

YUM! I took a shot of tequila right before dinner just for fun and these were soooo good! I added some coconut to these and I thought it complimented the lime really well.

Different but good. I preferred more lime juice and I wasn't crazy about the mayo. I broiled the burgers and I found it to be really juicy and flavorful. I'll definitely make these again!

Easy Creamy Deviled Eggs

I really enjoy wasabi in a lot of other dishes but not so much in this one. The second time I made this it turned out much better. I added dry ground mustard, a dab of white vinegar, a pinch of sugar and ditched the relish.

This took awhile to make because I didn't have the left over mashed potatoes but next time I do have left overs this is what I'll make with it! Very tasty and different than your average potato pancake.

Marinated Venison Steaks

I had only about 4 hours before my boyfriend's entire family came over for dinner and I was looking for something easy to make with venison (since my freezer is stocked with it). I made sweet corn on the cob and mashed potatoes as the side and the whole family loved it!!! Said they would have never guessed that it was venison. Will definitely make again!

Venison Tenderloin Bites

This was to die for!! I had more time than I thought I would have so I marinated the tenderloin bites in a mixture of garlic, ketchup, Worcestershire sauce, white vinegar, salt, pepper, and lemon. The tenderloins just melted in my mouth and my boyfriend and sister (who rarely eats meat) loved it and asked me to make it again the next night.

Chicken Cordon Bleu II

Really yummy. After I browned the chicken on the outside I cooked it in the oven for 45 minutes at 350. I would recommend to cut one open or use a meat thermometer to make sure it's cooked all the way through.

Venison Vegetable Soup

I loved this! I made some changes. I used fresh celery, red bell pepper, and carrots. My boyfriend who is usually pretty picky about soups seemed to enjoy it!!
