My Dad has always made wonderful guac, I was skeptical that being a native San Diegan I would find the best Guacamole I have ever tasted, but I did. This is WONDERFUL! You can eat it right away, but I found it key to let the lime juice, onion, garlic, and cilantro flavors mix for an hour or so in the fridge. Even better than Su casa's fresh table side guacamole. USE FRESH INGREDIANTS... I have made it three times in the past 3 days, and I used some onion that wasnt quite fresh and it wasnt as good. I also subbed air loom tomatoes, but they werent as good as the Roma. I dont know if you can improve this recipe if you try.. although maybe a sqeeze of orange which I will try next time.
