Baked Teriyaki Chicken

Loved this recipe! Even my 2 year old gobbled it up! I've made it twice and each time followed the recipe and doubled the sauce. First time, I accidentally poured all the sauce over my chicken thighs....oops. The second time I followed the baste and brush part. Both hubby and I agreed we actually liked the accidental method more! The pain was a beast to clean that time but the sauce glazed and became so rich and gooey. I'll be dumping on sauce and getting my scrub gloves on next time I make this :) served with jasmine rice and steamed broccoli. Definitely a keeper!

California Chicken

This recipe was fantastic and so easy to prepare! I followed the advice of others and marinated the chicken breast in a cilantro-lime mixture I made myself. The chicken was juicy and quite yummy :) I will be adding this to my recipe box!

Vegan Bean Taco Filling

This was phenomenal! My husband was very excited for "meatless" Monday :) I followed the recipe, but I replaced the salsa with Rotel. After I made the filling, I layered about a spoonfull of the mixture into the center of each flour tortilla and made it to burritos. Using someone else's suggestion on the site, I grilled each burrito in a non-stick skillet coated with PAM. A fast and easy dinner that I will surely make again!

Beef Bourguignon II

The sauce and flavor of this dish was great! The whole kitchen smelled wonderful and the recipe was easy to put together. My one complaint about this recipe is related to the cut of meat it calls for. I found the stew meat to be a little chewy and tough and I don't think it absorbed the flavor as well as it should have. Next time, I may use a different cut, maybe a chuck roast.

Grilled or Fried Skirt Steak

Banana Crumb Muffins

These were so easy to make! I had everything I needed right in my pantry and finally had a good use for those over ripe bananas. I thought the crunch topping was a great addition and even got my non-banana-muffin-eating husband interested in trying one :) I was especially excited once I pulled them out of the oven and they had formed a perfect peak...like bakery muffins! I added 1/2 tsp. cinnamon and a spalsh of vanilla to the wet ingrediants per other suggestions and they turned out great.

Two Ingredient Pumpkin Cake

I took the advice of others and added the 2 eggs, I also added a dash of vanilla extract. To frost and decorate I made orange frosting using a store bought cream cheese frosting and orange and green food coloring. I also baked the cake in a bundt pan using the baking temp and time chart on the back of the box. Everyone enjoyed this cake at our halloween party :)

Marinated Ranch Broiled Chicken

This was delicious! I used my indoor grill. I had to grill it for a slightly longer time than the recipe indicated but other than that I followed the recipe exactly. My husband loved it! It was a great early spring meal paired with sauteed zucchini and couscous :) Will definitely keep this one!

Coconut Macaroons II

these are super easy and yummy! I found no need for flour or any other alterations. Each batch produced rounded mounds of gooey coconut. I used silpats on my cookie sheets and removing the macaroons was effortless! A little melted chocolate really rounded these out nicely.
