Jalapeno Chicken II

This is great, esp. if you eat alot of chicken and just need something a bit different. I marinated in homemade italian dressing, from this site. Softened the jalapenos in the microwave, stuffed with cream cheese, used a whole pepper in each breast. Grilled on high about 20 min., just as stated. Will def. make again.

Cold Oven Pound Cake

4 stars as written, made it again,using 4 eggs, 1 tsp. salt and a tbs. of vanilla extract. We really liked it with the changes. Since then I have made this with coconut extract, lemon extract. The possibilities are endless.

Sesame Noodle Salad

Lemon Blueberry Bread

Despite coating my blueberries in flour they sunk to the bottom of the baking pan. I mean totally to the bottom and stuck despite spraying the pan. The batter did seem a little thin to hold up the blueberries. On the plus side, it was cakelike, had a very nice texture and taste. Just need to figure out what i did wrong.

Chewy Jumbo Chocolate Chip Cookies

Everyone at home and work loves these cookies. I always make them big, at least a tbs. just like the recipe calls for. I do sub white choc. chips, and or M&M's. Always come out slightly cakey yet a bit chewy.

Red, White and Blue Strawberry Shortcake

This is my family's fav summer dessert. I do place a layer of strawberries mixed with a small amount of glaze on top of the cooled cake. Also, have been using Cool whip frosting from this site. It holds up better than just cool whip.

Blueberry Cream Muffins

Very good moist muffin. Only change was increased blueberries to 3 cups. I will add 1/2 cup of sugar next time as mentioned in some of the reviews. Also could use a little sugar or crumb on top.

Baked Buffalo Wings

I changed this recipe a bit after reading several other wing recipes. These turned out great. I baked them at 425. I did add a splash of vinegar to hot sauce/ butter mix. I also baked wings after dredging in flour mixture before mixing with sauce.

Cinnamon Swirl Bread

Prepared as written, made sure I really swirled cinnamon sugar mixture and it turned out good. I have been trying several quick bread recipes recently. I think the oil could be decreased just a bit in most that I have made. Bake time was right on.

Penne with Spicy Vodka Tomato Cream Sauce

I have made this sauce several times and did not review it because I lef out the vodka. I decided to review the recipe because it just seemed to be the best of all the tomato cream sauces on this site, a perfect balance of ingredients. The only other change I made was to use 1/2 n 1/2 instead of cream. Sorry, I have also subbed chicken and shrimp instead of the sausage.

Easy OREO Truffles

What's not to love about these? I made 1/2 a batch using raspberry oreos. Dipped the chilled truffles in choc. melting wafers. The raspberry flavor really tasted good. I thought about using rasp. extract in the choc coating, but it wasn't necessary. They are very sweet, which could be cut by using bittersweet choc.

Strawberry Bread

The bread is ok, probably would not make again without change. Did use only 2 cups strawberries, that is all I had, and it def. is not enough to have a a good strawberry flavor. To much oil in recipe and to much cinnamon, and I love cinnamon. Should have made strawberry coffee cake from this site, that recipe is very good.

Sweet and Sour Smoked Sausage

Everyone liked this, would probably make again. It was an easy weeknight meal. I used a dash or 2 of cajun seasoning instead of cayenne and hot sauce. Also, had a few raw shrimp I cooked in pan with sauce after removing sausage/veg. No need for salt in this dish.

Best Spanish Rice

Increased chicken broth by 1/2 cup, put all ingredients minus oil in rice cooker. This turned out great, if you like soft slightly sticky rice. It worked for us and is very easy.

Elaine's Sweet and Tangy Loose Beef BBQ

For a 3 lb. round roast, 1/2 the ingredients and omited the cayenne. Like most other reviews, cooked on low for about 6 hrs. then shredded meat and returned to slow cooker for about 2 hrs.,added about 1/2 cup reserved broth to sauce.

Neapolitan Bundt Cake

Let me start out by saying not usually a fan of box cake mix. Rating this after my second attempt. I just liked the neopolitan idea because I love neopolitan ice cream. In addition to choc. syrup added 2Tbs. unsweetened cocoa powder and used about 2 tsp. strawberry extract. The batter makes about 4 cups, divided into 3 equal amounts, and layered in bundt pan. It was moist and flavorful. Did not have that box cake artificial taste. Topped with vanilla glaze and chocolate glaze.
