Neapolitan Bundt Cake

Let me start out by saying not usually a fan of box cake mix. Rating this after my second attempt. I just liked the neopolitan idea because I love neopolitan ice cream. In addition to choc. syrup added 2Tbs. unsweetened cocoa powder and used about 2 tsp. strawberry extract. The batter makes about 4 cups, divided into 3 equal amounts, and layered in bundt pan. It was moist and flavorful. Did not have that box cake artificial taste. Topped with vanilla glaze and chocolate glaze.

Sugar Cookie Icing

This is the best icing for cookies. I have been using it for several years and it never fails. I have used many different flavored extracts and food color. I usually paint it on.Perfect!

Strawberry Coffee Cake

This is a easy and good cake recipe considering the minimal amout of time and ingredients required. Used brown sugar for topping and omitted the pecans. Baked for about 35 mins. in springform pan.

Roast Sticky Chicken-Rotisserie Style

Used 1/2 the recipe and reduced the salt even more for 2 whole chicken breasts. Baked about 4hrs., 5 hrs. would have been too long. It turned out good.

New England Crab Cakes

These crab cakes are as good as it gets. I have several other recipes for crab cakes that are more time consuming to prepare with ingredients that are not necessary. The only change I made was to use 1 tsp. dry mustard instead of dijon and combination butter and canola oil to saute.

Baked Teriyaki Chicken

I used boneless chicken breasts, doubled the sauce but probably didn't need to, that was for 2 whole breasts. I used brown sugar and less sodium soy sauce, it was still salty but very good. I had planned on lining my pan with foil per the reviews but I forgot. I will def. not forget next time.

Luck o' the Irish Brownie

These are very good, very rich tasting brownie. I loved the mint layer, anything buttercream can't be bad. I used to make almost exact recipe except used a small can hershey's chocolate syrup, can't find the recipe though. I think those brownies turned out more cake like than these.

Vanilla - Chocolate Powdered Sugar Frosting

doubled to frost a cake. Tasted great, used 1/2 n 1/2 instead of milk.Also, after doubling all ingredients used about 1/2 to 3/4 cup less sugar.

Absolutely Excellent Oatmeal Cookies

These cookies are pretty good. I do like cakey cookies, these were soft but not exactly the dense texture of a true cakey cookie. Made 1/2 with choc chips and raisins, 1/2 with dried cranberries and white choc chips.

Caramel Shortbread Squares

Followed other reviews, used parchment to line pan, let shortbread cool. Did not have any problem getting them out of the pan. I did add 1 tbs. butter to choc. chips. I think maybe just a different shortbread could make this 5 stars imho.

Slow-Cooker Chicken Tortilla Soup

This was a quick easy recipe, especially with cooked leftover chicken and homemade chicken stock. Dosen't necessarily need to simmer in a crockpot but it probably helps the flavor. Will make again. Also used Bill's taco seasoning from this site instead of all the spices listed.

Taco Seasoning I

Will never use packet of taco seasoning again. Used for chicken tortilla soup, chili, tacos, to season meat for enchilada's. Have made as stated and adjusted red pepper and chili powder depending on what I'm cooking. Thanks Bill.
