Maple Pecan Shortbread Squares

Very easy recipe. Followed directions exactly with great results. Did line pan with easy release foil, it worked like a charm.

Chicken Parmesan

This is a little bit of work for a weeknight but the end product was well worth it. I did use thin chicken breast filets which saved time with the pounding thin. I also used 1/2 the amount of bread crumbs and parm. for coating, still had more than enough. Next time I will put the cheese on for the last 5 mins. of baking. I do like browned cheese just not on my chicken parm.

Creamy Italian Dressing I

Really like this creamy italian. I used onion powder because I just wanted to mix it by hand. That was really the only change I made. I suppose you could sub other vinegars or lemom juice. It was pretty thick and probably could be thinned a little with milk, olive oil etc. So many possibilities. Will def. make again and again Thanks Kathy!

Slow Cooker Au Jus Pot Roast

Made exactly as written. Did not skip a step. It was very good. Made a 3 lb. roast ready in about 6 hrs.in my not so slow slowcooker. I have had other roasts made in the oven that were better.

Homemade Chicken Gravy

This is good stuff. I did use 1/2 n 1/2 and corn starch, instead of cream and flour. Very smooth with great consistency and flavor.

Creamy Rice Pudding

This had a good flavor. Despite the fact that I have not made rice pudding in many years I don't think I did anything wrong. This became very thick when refrigerated. Followed the recipe to a t. I had no trouble with adding the egg or cooking to the right consistency. I think I am going to try the recipe on this site that uses a rice cooker. I did use Goya short grain rice.

Honey Roasted Carrots

These are very good. Baking time was perfect. I had about 10 whole thin organic carrots left whole. A bit different then the butter, brown sugar glazed carrots I serve often.

Awesome Red Wine Pot Roast

This roast is really tasty. I used the beef broth substitute instead of water, like most reviewers. Baked about 3 hrs and well done without being dry. Used 1 large sliced onion, but did roast carrots in a different pan and served with mashed potatoes. Also want to say I rarely cook with wine but did use a calif. red organic and made some gravy with pan juices. Will def be making this again. Thanks KarenCooks.

Chex® Pumpkin Pie Crunch

This is good, quick, easy and versatile. Used rice chex, honey grahams, cheerios, and cashews. Kept cereal, vanilla, spice, sugar and butter measurements the same. Just used the cereal I had on hand.

Instant Potato Pancakes

I did start with left over instant mashed potatoes, justed added a bit of flour to firm them up a little. They were really good, def better than plain old instant potatoes.

S'more Brownies

Only change was I used graham cereal pieces, and only 3 candy bars which seemed like more than enough. No difficuly getting out of pan or cutting. I used parchment and cut brownies with a plastic knife. I wanted to make these all summer, and finally got around to it on the first day of fall.

Sausage, Peppers, Onions, and Potato Bake

A great success in my house. I don't really like sausage too much, but this is very good. Cut the recipe in 1/2, otherwise no changes. I think it is a fairly easy weeknight meal.

Tangy Cucumber Salad

This was good, that being said there are so many different cucumber salad recipes. I think it is just a matter of personal taste. Decreased the basil and oregano just a bit and used just a small amt. of onion.

Classic Macaroni Salad

This is the macaroni salad recipe I have used for years, just did not have a reference point as to dressing amounts. I made as stated, it was a bit dry and then made it again.Added 1/4 cup more mayo and 2 more tbs. of vinegar. Omitted the green pepper, imo it overtakes the other flavors. Also used sliced green olives instead of pimentos. My mom uses this recipe and adds sliced hard boiled eggs.

Slow Cooker Green Beans, Ham and Potatoes

Granted this did need a little more attention than most slow cooker recipes but well worth it. I used a ham bone with quite a bit of meat on it. Followed other directions except omitted the onion. very good. Also love the splash of vinegar just before eating.
