Honey Roasted Red Potatoes

Reviewed: Mar. 9, 2013
Read many reviews of this recipe. Also has been frequently recommended on the buzz, now I know why. It is so good. The honey is not overpowering. I used at least 1 1/2 lb. of red potatoes, increased the butter to 3tbs. and the honey to 2tbs. Will def. make again. Baked for 45 mins., my potatoes were soft at 35 but not carmelized. Served with new england crab cakes, an ar recipe.

Fried Sweet Potatoes

Reviewed: Mar. 3, 2013
These are good enough for a 5 star rating even though i did use only 1 cup of brown sugar, 1/4 cup of butter for 9 rather small organic sweet potatoes. So i did not change the ingredients just the measurements. Oh i did throw in a handful of pecans toward the end of cooking.

Chef John's Sloppy Joes

Reviewed: Mar. 2, 2013
Everyone loved this. I grew up on coal region hamburger bbq which is tangy and tastes like ketchup. This is so much better. I used about 1/2 cup less water than called for but the full amt. would have worked. It just needs to simmer for a bit. Will make again.

Made my box brownies taste homemade. You def. need to follow directions for the boiling of the butter and sugar to get a smooth frosting.

Baked Coconut Shrimp

Reviewed: Mar. 1, 2013
I broiled shrimp for about 2 mins. each side after baking for 20 mins. just was not crispy enough. I was afraid of overcooked shrimp but they were just right. I still needed to rate 5 stars because it is an awesome recipe without needing to fry the shrimp. I did use large shrimp. Maybe I could of dried the shrimp off more before dredging in flour/egg mixture to help make them crisp or frothed the egg white a bit more. I did refrigerate for about 1 hr. before baking.

Buttermilk Mango-Berry Crumb Cake

Reviewed: Feb. 8, 2013
I substituted cinnamon for the optional nutmeg as suggested in review. I think it could be five stars without cinnamon in cake batter. Texture was just right. Had a combination of fruit, a little bit of raspberries, mango and blackberries was perfect.

Black Magic Cake

Reviewed: Feb. 3, 2013
This cake was very moist, but not really rich. It was just not to my taste but there is nothing wrong with it. I just expected more based on all the great reviews. It also really stuck to my prepared pans. I bake alot and don't usually have that trouble.

Hasselback Biscuits

Reviewed: Jan. 20, 2013
Was checking out the buzz one day and everyone was talking about this recipe. I usually don't have biscuits in the frig. I happened to have some of the grands, just had 1 pack since they are bigger I did separate them just a bit more so they would bake completely. They turned out great Thanks arich01.

Applesauce Cake V

Reviewed: Jan. 8, 2013
This cake was ok. It was a little dry. It seemed the consistency of the batter was off. Maybe 1/2 cup less flour, more egg or butter. I don't know what the problem is. The flavor was good but the texture needs some tweaking.

Melt-Away Peppermint Wreaths

Reviewed: Dec. 28, 2012
Since it seemed the main problem was getting the dough to stick together, I just made small cookies with a teaspoon size cookie scoop. Drizzled cookies with powdered sugar/milk glaze then dipped in crushed mints.

Chicken Parmesan

Reviewed: Dec. 14, 2012
This is a little bit of work for a weeknight but the end product was well worth it. I did use thin chicken breast filets which saved time with the pounding thin. I also used 1/2 the amount of bread crumbs and parm. for coating, still had more than enough. Next time I will put the cheese on for the last 5 mins. of baking. I do like browned cheese just not on my chicken parm.

Creamy Italian Dressing I

Reviewed: Dec. 14, 2012
Really like this creamy italian. I used onion powder because I just wanted to mix it by hand. That was really the only change I made. I suppose you could sub other vinegars or lemom juice. It was pretty thick and probably could be thinned a little with milk, olive oil etc. So many possibilities. Will def. make again and again Thanks Kathy!

This is good stuff. I did use 1/2 n 1/2 and corn starch, instead of cream and flour. Very smooth with great consistency and flavor.

Creamy Rice Pudding

Reviewed: Oct. 28, 2012
This had a good flavor. Despite the fact that I have not made rice pudding in many years I don't think I did anything wrong. This became very thick when refrigerated. Followed the recipe to a t. I had no trouble with adding the egg or cooking to the right consistency. I think I am going to try the recipe on this site that uses a rice cooker. I did use Goya short grain rice.

Honey Roasted Carrots

These are very good. Baking time was perfect. I had about 10 whole thin organic carrots left whole. A bit different then the butter, brown sugar glazed carrots I serve often.
