Spanish Potato Omelet

I love eggs....I love potatoes...and onions! SO obviously I loved this recipe haha. I didn't modify this much except when I needed to substitute for ingredients I didn't have at the moment. People may run into problems while trying to keep the potatoes crispy. This means managing the fire, etc. Nonetheless, such a great, simple breakfast.. This has saved me from starving when I had nothing else on hand to start my day. :)

Crustless Spinach Quiche

I've made this a few times already and it never fails me! LOVE THIS! I did add more seasoning as others had suggested like nutmeg, garlic salt and basil including sauteed mushrooms and white/green onions. Also I used a regular cupcake pan and it came out so adorable! Before I popped it into the oven, I placed slices of tomato on top which adds that needed tart compliment and presentation. This can work well with frozen or fresh spinach, whatever's convenient at the time. :D

Colorful Frittata

Quick and simple! It can be modified to one's taste or done with what you already have in the kitchen. You can probably season it alittle more if it's too bland. :)

Chicken Stuffed Chiles

I followed one of the other reviewer's suggestions. I used anaheim peppers by downsizing the servings to 3. The first time I did them I used all cheddar but the second time, I used the packaged mexican cheese variety (cheddar, monterey jack, etc.). Both came out wonderful. It is true. The enchilada sauce is key. I used the mild El Pato red enchilada sauce in the can. It has enough flavor without it being overly spicy.

Plain Caramel Apples

These were very delicious. I actually doubled the batch but instead of using the 2 whole 14oz packaged caramels, I used 1 bag and about 3/4 of the second bag. As I was dipping the apples, the caramel was getting very thick and drying quickly resulting in the apples being uneven. In the end, it came out well and everyone definitely loved them. Next time, I will not take my time. I suggest for people to dip fast and swiftly. :)

Poor Man's Sandwich

Wow, I was extremely skeptical at first but I decided to try it since I had all the ingredients on hand. AND BOY, was I pleasantly surprised! It tastes great and I was sure afraid that the peanut butter would be overwhelming but that was not the case at all. (Yet I did keep the mayo at a minimal.) Every ingredient brings together a balanced taste as a whole and oddly enough, each ingredient can still be detected with every bite! I highly recommend this! Simple and delicious!

Spinach Lasagna III

This is just Great! I am a beginner in cooking and this was pretty simple for even myself. The taste was most enjoyable. Love the spinach, cheesy taste! (Update-I am not a big fan of Romano cheese so just substituted it with more mozzarella cheese/Parmesan for the mix)
