Spanish Potato Omelet
I love eggs....I love potatoes...and onions! SO obviously I loved this recipe haha. I didn't modify this much except when I needed to substitute for ingredients I didn't have at the moment. People may run into problems while trying to keep the potatoes crispy. This means managing the fire, etc. Nonetheless, such a great, simple breakfast.. This has saved me from starving when I had nothing else on hand to start my day. :)

Crustless Spinach Quiche
I've made this a few times already and it never fails me! LOVE THIS! I did add more seasoning as others had suggested like nutmeg, garlic salt and basil including sauteed mushrooms and white/green onions. Also I used a regular cupcake pan and it came out so adorable! Before I popped it into the oven, I placed slices of tomato on top which adds that needed tart compliment and presentation. This can work well with frozen or fresh spinach, whatever's convenient at the time. :D

Chicken Stuffed Chiles
I followed one of the other reviewer's suggestions. I used anaheim peppers by downsizing the servings to 3. The first time I did them I used all cheddar but the second time, I used the packaged mexican cheese variety (cheddar, monterey jack, etc.). Both came out wonderful. It is true. The enchilada sauce is key. I used the mild El Pato red enchilada sauce in the can. It has enough flavor without it being overly spicy.
