Chicken Taquitos

Seriously, this recipe is awesome-good! And.. it was awesome-fun, too. My dad, brother, and I have been chatting, chopping, shredding, laughing, mixing, frying, and feasting all night.. And, the flavor exceeded our wildest expectations - I promise, if there were room in our bellies, there would not be taquitos in our fridge. Now, as a disclaimer, I must admit that this recipe served as more of a starting point than a blue print. We did use salsa verde, but we opted for queso fresco instead of the cheeses in the recipe, and we added green chiles and spices to the meat mixture. We also substituted crema mexicana for sour cream. My family and I had a truly amazing time tonight, and we had an even better meal.. I suggest you do the same. :)

Salsa Cheese Boule Dip

I think my expectations may have been a little too high, because although this dip was good, I didn't like it nearly as much as other reviewers. Most of my coworkers who tried it were complimentary. Every single person who saw it had to know the ingredients.. it was pretty gross-looking..

Mint Chocolate Chip Cookies

These cookies are pretty tasty as is. But, in subsequent batches, I've added a tad more of the food coloring and the mint extract. Also, I always line my cookie sheets with foil when I make these, because the edges brown way too much when I don't.

Sugar Coated Pecans

like another reviewer, I beat 2 egg whites, 1.5 tbsp water, and 1 tsp vanilla in my stand mixer. then, I mixed in the pecans, and gradually stirred in the sugar mixture. after baking as directed, they were FANTASTIC! and, I really don't even like pecans.
