Soft Frosted Sugar Cookies

I have always hated these frosted sugar cookies like the icky sweet kind you buy at the grocery store during holidays. I indugled my kids this St. Pat's because I hate all the dyes and ick that goes into the store bought ones. OMG! My little daughter begged me to try a bite and they were absolutely DELICIOUS!!!! If you like extra sweet, make these. They are easy and you can make them right away (no refridge needed). The frosting is excellent. Thank you for posting the recipe. BTW, you want to roll them out with extra flour, (as with most sugar cookies), this way, if dough is soft, you can add what you need and they won't sick while cutting out.

Creamy Macaroni and Cheese

I halved the recipe because I have a small family and added a 1/2 tsp of sea salt and left out the Dijon and used lower fat cheddar. It was GREAT! It is very similar (but better) than the mac and cheese my toddlers love at Jason's Deli. Yum! I would have added the Dijon and pepper, but I thought the kids would like it better plain.

A first time HIT with family! Never made baklava before. So easy (just time consuming as working with filo always is) and so good! I used a vanilla bean which gave it a little different flavor than baklava that I have had, but it was a nice flavor twist. BTW, I always see baklava as a "middle eastern" dessert (lived in a neighborhood that sold it fresh at middle eastern markets). It is fair to say, like many dishes, that it came via the "east" to Greece. No wonder it is also a Greek favorite.

Ricotta Gnocchi

This recipe is fabulous! It is easy and quick to prepare. It is the absolute best gnocchi I have ever made. Because I am always looking for shortcuts, I snipped 1" pieces with a scissors instead of a knife. It worked great.

Whole Grain Waffles

This recipe is pure genious! So scrumptious! I substituted low fat buttermilk (I love the flavor of buttermilk). It turned out so yummy. My whole family gobbled them up, and I have 2 picky little toddlers! I topped the waffles with sweet bean paste (made with black-eyed peas and simple sugar) and homemade strawberry sauce. Such a delicacy! Thank you for such a great recipe!
