About this Cook
I used to enjoy baking best, and cooking was often times just trying to get food on the table for hungry children - however now that our home is an empty nest my husband and I are learning to cook together. We are constantly on a quest for creating the best dishes.
My favorite things to cook
Welsh pasties, Beef Wellington, > I love trying new recipes.
My favorite family cooking traditions
We always decorate and use our best china and silver for each holiday and make it really special. We have certain recipes that we love for each event. Oyster stew for Christmas eve, A James Beard recipe for Coffee cake baked in a heart-shaped pan for Valentine breakfast.
My cooking triumphs
My husband and I are constantly entertaining it is nothing for us to have 20-40 people over at one time......the timing of finishing everything at once is a triumph.
My cooking tragedies
Not adapting recipes for high altitude. I've ruined many baked goods not doing this. Also, I made a standing molded sheep cake for my daughters birthday when she was 4 years-old. I was decorating it as the guests were coming in the front door and the head fell off. I took the crumbs and a bit of icing and molded a new head and frosted it.

Jamaican Burgers
My husband is a die hard carnivore and he absolutely loved these! Since my daughter has Celiac's disease, I toasted 6 slices of Udi Gluten-free bread and tore them into small pieces for the bread crumbs and then ate them bunless. I smooshed the mixture together by hand until it was the texture of raw hamburger and they held together well. We all thought these were the best veggie burgers we'd ever eaten!

Apres Ski French Toast
The flavor is superb! However it was a bit eggy for our liking. Next time I will be sure to use older bread and cut the slices thinner.

Chewy Caramel
I made these for my father on Father's Day and he loved them! These caramels have a wonderful flavor. I didn't have a candy thermometer but tried cooking it to the soft ball stage, but thought it too soft and cooked it a bit longer. I then refrigerated it and it turned out as hard as a piece of Wuthier's candy. I then inverted the pan and pulled out the entire piece of caramel and broke it into smaller pieces using the back of a spoon (be careful as it can shatter into sharp shards)Then, just before eating, I microwaved a piece in the microwave for about 8 seconds - it turned out into a wonderful soft piece of caramel - absolutely delicious. My father liked them just the way they turned out and asked me to cook the next batch to the hard candy stage - So don't despair if you think you've ruined them by overcooking -you just have a different creation.
