Tartar Sauce I

Reviewed: Dec. 29, 2011
I've been making my own tartar sauce this way for years. We don't care for sweet pickle relish but love the dill pickle relish. Sometimes I use pickle juice instead of lemon juice, and a dash of cayenne for a little kick, lately because of health issues I use 1/4 mayo to 3/4 plain fat free yogurt. it's delicious and healthier.

The Best Zucchini Fritters Ever

Reviewed: Aug. 24, 2011
The way this is written is a 3 star recipes but has the possibilities for a 5 star. Tweak to your tastes! One large zucchini yields two cups , two cups of flour is too much, cut back to 1-1/2 and add 1/4 cup of milk more or less. Definitely shred the zucchini and fresh garlic is a must, add lots of cheddar cheese , no onion powder is necessary. Serve w/ fat free sour cream .....yummmmm

Savory Chicken Breasts

Reviewed: Oct. 5, 2010
Wow this has a lot of reviews! I know people get mad when you change the recipe but, I think your a good chef when you use what you have on hand and still make it taste good. This is an excellent recipe you could do so much with. I had 3 large chicken breast that I cut in half, used Monterrey Jack cheese (its what I had) added 1 can of mild chopped green chili to the cream of chicken and mushroom soup. I seasoned the breasts with poultry seasoning, garlic and tad bit of cumin, put the shredded Jack on top and then poured the soups with the green chili over the breasts, last went the bread crumbs. It was deliciousss..... with a hint of mexican flair. I did have to bake it longer than it said.

Parmesan Asparagus

Reviewed: Jul. 15, 2010
Love...love...love, but of course we love asparagus. This was tasty. 12 minutes tops and then set aside for 5 minutes. Not soggy and just the right amount of crunch, skip the garlic salt, add fresh slices of garlic and sea salt and pepper, just wonderful.

Cilantro-Lime Rice

Reviewed: Jul. 8, 2010
Yeah! I got alot of compliments on this rice. We BBQ carne asada, had refried beans along with this rice. It was just right for this. BBQ. Yes we were all mexicans and I'm always looking for something different than your tomato based mexican rice which I'm not a big fan of and this was it. I did use Caldo de Pollo and it was very good, I made it again for some other friends who are vegetarians using Swanson vegetable broth and it was just as good. Add corn and peas and you have a wonderful vegetarian meal or side dish. I dont know about any burrito places that use rice like this, but I do know that this will be our new Mexican rice. Thanks Mrs. Brown

Mexican Salmon

Reviewed: Jul. 8, 2010
Hmmm...We love salmon and eat alot of it since my heart attack a few years ago. I think I might pass on this recipe, maybe I didnt allow it to marinate long enough, needs longer than an hour. The flavors of the cinnamon, allspice and peppers didnt come through for us. I served it over Lime Rice and sauteed a few vegies as well. It dosen't sound or taste too mexican for this mexican. I will look for another Mexican Salmon or come up with my own. Thanks for the recipe though.

Stuffed Peppers My Way

Reviewed: Jul. 8, 2010
Very nice and light for a change. Great meal! At first I thought I was adding too much seasoning, but I was wrong and added fresh garlic along as others said fresh basil...wow what a difference. Also used mozzerella and topped off with freshly grated parm. My husband wanted meat with it so maybe next time I will add chicken or ground beef. But for me delish!!

Aunt Carol's Spinach and Fish Bake

Reviewed: Jan. 13, 2010
This was so-so for us we really are not fans of cod but I thought we would try something other than salmon. Cod is a basic white fish with not too much flavor, even though I added spices. The spinach was wonderful and the cheese is what made the dish, In the future I will try a different fish even talapia is better for us than cod.

Quinoa Side Dish

Reviewed: Dec. 31, 2009
This was our first time eating Quinoa and it was amazing, I will continue to use it especially for its health benfits. The garlic explodes in your mouth and definately do not leave out the splash or more of fresh squeeze lemon juice, it gives it a tangy flavor giving it a boost. I used the dry herbs and it came it great my family wanted more. This will be our new side dish. Thanks Sal this is a great recipe

Spicy Bok Choy in Garlic Sauce

Reviewed: Dec. 31, 2009
Ohhh! The flavors were amazing, If you have never tried bok-choy you really have to try this. Bok-choy is healthy and delicious especially with asian inspired flavors. Cut back on the oils if your concerned with calories. I dod not have chili flakes so I used asian chili paste 1 tsp. the garlic flavor with the brown sugar and a hint of sesame oil is delicious, I will making this again and again.

Oregano-Lemon Chicken

Reviewed: Dec. 31, 2009
I would like to give this more stars and maybe I will once I do as the others did and let the chicken marinate for an hour or so. I used thighs and drums, the oregano flavor stood out and I think it could of used a little sea salt. I will try it again, thanks for the recipe.

Cheater Pot Pie

Reviewed: Dec. 3, 2009
For our family this was just ok, I think the bread texture for us was a bit too much. I used a roasted chicken from the store and added a bit of canned milk with 2 percent milk which added thickness and made the filling richer. I had no problem with it being runny. The filling itself was good with a little tweaking of spices we enjoy. I will try adding this a flaky pie crust.

Stuffed Pork Chops III

Reviewed: Oct. 12, 2009
These were ok, I followed the recipe but I think I may have over stuffed them, the filling fell out making it look ugly and they seemed like they were swimming in broth. They tasted fine though and were moist, I was not able to make a regular gravy like others were since alot of the filling fell out. I put the leftovers stuff from the pan in a blender, blended all together and then back in the pan with a little butter, this was delish served over our chops. I will try this again. I gave 3 stars because I was dissappointed with the filling falling out, not the fault of KAREN....

Spaghetti Squash Saute

Reviewed: Sep. 16, 2009
Spaghetti squash is delicious all by itself with a little salt and pepper. Tonight I decided to really spice it up. I baked it like the recipe said, while baking I sauteed onion, a tsp. fresh garlic and mushrooms in a bit of EVOO and Smart Balance Butter. I then added the spaghetti squash, sprinkling with salt and pepper, putting on a serving platter then finishing off with fresh garden roma tomatoes....It was amazing alot of flavors popping in your mouth. My family has always loved spaghetti squash or any squash for that matter. Enjoy!

Garlicky Summer Squash and Fresh Corn

Reviewed: Aug. 26, 2009
I have been doing squash and corn like this for years. In "spanish" we call it "calabasitas con maize". We love it as we look forward to harvest time for the squash and fresh corn. Works with frozen and canned as well.Do away with the broth its not needed or add very little as the squash and corn cook in their own juices and for a nice kick add a diced jalapeno. I dont add basil or other peppers but I'm willing to give it a try, thanks. Serve it with rice, beans and tortillas. OMG! My mouth is watering...mmmm!

Steak Sauce

Reviewed: May 12, 2009
Hmmm! No not a keeper for us, it reminded us of Heinz 57 which we dont care for. It also had a strong ketchup taste so I tweaked it a bit I added a little liquid smoke and 2 TBS.dark molasses, cutting the honey to 1/4 c. I think I will let it set over night and try it tomorrow. Maybe this will be a rewrite.

Cauliflower Side Dish

Reviewed: May 12, 2009
This was not a good recipe for us. Came out very dry. We added more butter but that made it into a mush. We enjoy our vegies and I thought I would give this a try. Cauliflower is a delicate dish when cooked so you have to be careful with adding ingrediants. So far just plain old butter, salt and pepper work for us. Thanks though.

Chicken Marinade

Reviewed: Apr. 21, 2009
Ok, first, this chicken was unbelievably moist, my husband accused me of under cooking it. I did not do any substitutions but I did add 2 Tbsp. of sherry instead of 1 Tbsp. And I used bone in breast chicken. (OOPs I guess thats a subtitution) I grilled the chicken on our gas grill served it with a big green delicious salad. As for the taste, I honestly found it a bit flavorless on the inside, the outside had a wee bit of asian taste. We ended up pouring BBQ sauce on it after we took it off the grill. If you like a light marinade taste then this is it for you. Thus if I could I would give it 5 stars for being so moist but 3 stars for taste. Maybe this is a good starter for more spices, I will try this again. Thanks
