Best Peanut Butter Cookies Ever
After reading reviews, I made these using 1/2 cup less sugar. Very good but I'll reduce it 3/4 cup next time and then down to 1 cup if necessary. Mine did not spread while baking (I used the Jif I had on hand and 1.5 tsp baking powder--could not taste it in the cookie). I also used my little melon ball thingie and it worked great. Be sure and let sit in pan for a few minutes before taking them out, they're very soft out of the oven. I use parchment paper and just slide them out onto my cold tile table. Very fast to make.

Chicken, Asparagus, and Mushroom Skillet
I doubled the recipe to serve 4 and followed it as written. The chicken poached in so much liquid and the big slices didn't look appetizing. It also cooked through much faster than the recipe indicated. The flavor was good and was liked by all but our picky eater. I'll try it again but adjust as some others suggested, and I'll slice the chicken in small (think Chinese) strips.

Pork with Peach and Black Bean Salsa
Adults liked it, mixed reviews from the kids. I'm afraid no one liked the texture/flavor of the peach slices. Meat nice and tender--had no problem with the cornmeal--made sure the pan was very hot before browning them as others suggested. Used a medium salsa and a whole can of beans. Will try again and add some garlic, a small can of corn and crush the peach slices.
