Sweet Potato Pineapple Casserole

I was really impressed with this recipe. I subbed the butter for a dairy-free buttery spread due to allergies in this house. This was a simple, yet a sweet, satisfying casserole which is a nice change from the heavy syrup-y sweet versions.

Fantastic! I omitted the butter due to a dairy allergy. I used yellow basin gold potaoes with the peels on. I like mine a little crispy on the outside so I cooked mine for ~60 minutes.

Pumpkin Spice Cupcakes

I don't think it's fair to change a recipe drastically and then rate it according to my alterations. That being said; I intentionally changed nothing. Unintentionally, I doubled the spices. Oops! They turned out great! I used neufatel cheese rather than cream cheese simply because it was what I had in the frig. My oven cooked these to perfection at 22 minutes. These are TO.DIE.FOR! **UPDATE** made these a 2nd time, followed the recipe verbatim. Out of this world yummy!

Hot Apple Cider

This was really good. Instead of just adding the peels, I added slices of orange and lemon because it looks pretty. Next time I won't leave them in as long. As a previous poster mentioned, the citrus tends to make the cider bitter after a while. It's important to add the spices that are mentioned. If you use ground spices as a substitute, it won't dissolve quite right and you'll have a layer of spices on the top.

Fish Tacos

Homerun! That sauce has been dubbed "World's Best Sauce" in this house. We make it to go with rotisserie chicken too. Outstanding! Even the kids tear this dish up! I'm usually pressed for time and cheat by using Costco's panko crusted tilapia.

Lemon Macaroon Tartlets

These were good. The edges were burning while the insides were still bubbly. :-( I have only a 12 mini muffin pan so I practically burned the first batch. The second batch was better. I used lemon curd and cool whip for the top. These are really pretty but, a lot of work. I'm glad I made them. Hubby thought they were good. And, anything with coconut and lemon is a hit in my book :-)

Brownie Caramel Cheesecake

I made the mistake of not reading the reviews and followed this recipe word for word. My cake looked NOTHING like the one featured. Mine was very thin. 65 total minutes baking time for that poor brownie? Seriously? This is the only cake I've needed a knife to cut thru the crust. This is a very misleading 4.5 star average recipe because those that gave it high scores altered the recipe significantly.

Baked Spaghetti

This was really good. I used the "calculate" tool to adjust my serving size to 4. Careful if you do this because it did not adjust all ingredients. I had a heaping 9x13" dish, no way could this be 4 servings! Guess what's for dinner tomorrow? :-) Hubby LOVED this!!!

I thought these were really good with a cup of coffee! I made mine a little bigger than suggested and (by mistake) added 1/2 the amount of coconut into the frosting rather than putting it on top. Still very good with my goof!
