Coconut Muffins

Very thick batter almost as thick as cookie dough. The end result was a very flour-y tasting muffin with dense consistency more like a scone. The only change I made was making these in a mini-muffin pan. I'm sorry but, I really didn't care for these at all. :-(

Coconut Oatmeal Cookies I

I think the serving size of 2 dozen is way off. My batch yielded 44 medium to large cookies and they were raw in the middle at 10 minutes. If I would have made 24, they would have been the size of a saucer and taken considerably longer to cook. I left mine on the cookie sheet after cooking about 11-12 minutes. They are very soft coming straight from the oven but continue to cook and harden. The next day they were a good consistency. They taste really good.

Chocolate Covered Cherry Cookies II

My dough was crumbly and dry. I read and re-read the instructions and ingredients. I don't see where I went wrong. Also, I ended up with more dough than cherries. I had great expectations for these cookies and bummed they didn't turn out that great.

Black Bean and Corn Quesadillas

I thought these were pretty good although a bit too sweet for my liking (I can see why this is popular with the kiddos). Even with the pepper flakes added, this was a very mild quesadilla which could have used a little more zip. Maybe cilantro and cumin? Also, I think this would be good with some shredded chicken.

"Best after 1 or 2 weeks" Seriously? I can't imagine them getting any better nor would I have the will power to wait. These were gone in 48 hours. My filling/cherry ratio was a little off but I applied a thicker wrap around the cherries in the beginning which led to a thin/sparse amount towards the end. Will definitely make these jewels again!

Really good and really easy. Used motzarella and cheddar because that is all I had. Tasted great. **Update** made this just as stated with Muenster cheese this time and it was so darn good! My family LOVED it!

did not like at all. There is no way this is 4 servings. This makes a much, much larger batch. The taste was very salty. I was skeptical about using 2 pkgs of onion soup mix but, followed the recipe exactly.

Bread and Celery Stuffing

I no longer stuff my bird so I would have to call this "dressing". I've made so many versions of dressing over the years, w/ sausage, cornbread, apples, craisins, fresh herbs....Not only is this version the easiest but, in my opinion, the best. A classic!

Citrus Wild Blueberry Sauce

I just love the the flavor the cinnamon and citrus adds to the blueberries. Yum! I used fresh blueberries because they were going bad and I wanted to use them. Because I used fresh rather than frozen blueberries, there was less water so I should have used less cornstarch. My syrup was a little too thick but, tasted ooooh so good!
