Summer Beer II

I make summer beer but instead of the water I use 2 bottles of beer and I use regular lemonade instead of pink. I think the pink lemonade will make it too sweet.

Grilled Lemon Chicken

A great summertime recipe or anytime at that. I use chicken thighs and about a tablespoon of red pepper flakes instead of the red bell pepper. I didn't think the red bell pepper did anything for it but the red pepper flakes give it a little zing.

Oatmeal and Wheat Flour Blueberry Pancakes

I'm always trying to find a healthy pancake recipe and this is one of my favorites since I love blueberries. I made a few changes. I doubled the amount of blueberries, I used almond milk because that is my preference and I also used old fashioned oats instead of quick cooking since that is even healthier. I mixed the milk and oats together and stuck it in the microwave for 1 minute and it turned out great.

Super Summer Salsa

Serving isn't right if you are using as a salsa. This does make much more than 6 servings. I followed other reviews and halved the sugar and still thought it was too sweet and also felt it was too much corn and not enough beans. I will make again and adjust accordingly.

Jim's Cheddar Onion Soda Bread

Yum! I had to bring a soda bread to a St Patrick's Day dinner last night and thought I would give this recipe a try. Traditional soda bread is a little on the sweet side and I was looking for something that would be good to eat with the irish stew that was being served. OMG! this was delicious and pretty simple. I will be making again. It does require more buttermilk and I followed other reviews and used green onion which I think really made it.

Elegant Oyster Soup

We made this for Valentine's day dinner and it was delicious. To lighten it up, we used fat free evaporated milk instead of the heavy cream. It has a wonderful flavor. We will be making again.

Pork Dumplings

I made these as an appetizer for a Japanese dinner party. They were a huge hit. I halved the recipe and it was still plenty for the 10 guests; not sure where they get 6 servings from if you make the full recipe.

Cucumber Sandwiches III

I've been making this for years but this calls for too much mayonnaise. You should only put in one heaping Tablespoon in otherwise it will be too much. And I highly recomend using fresh dill sprigs.

Flourless Peanut Butter Cookies

Great low carb cookie when using Ideal sugar. My husband make these when we want a sweet treat without all the calories. Make sure you add a little more butter because it comes out a little dry when baking with Ideal otherwise you would never have guessed it was low carb.

Banana Split Cake V

This is one of everyone's favorites cakes I make for the guys at work. It's light, refreshing. and a great warm weather cake (but I will eat anytime). I do use a smaller tub of cool whip and then drizzle chocolate syrup on top with a couple of cherries.
