Bread Pudding II

This came out moist and delicious. I used the recipe exactly except added 1/4 cup chocolate chips along w/ the raisins. After it baked, I topped it with a vanilla sauce: Heat up 1 cup milk, 1/4 sugar, 1 tblsp. cornstarch, 1 egg yolk, and a tsp. of vanilla. I also topped it with french vanilla ice cream. Yum!

Creamy Caramel Flan

I agree with others that this is more of a hybrid of flan and cheesecake. I changed this recipe as follows: 1)Used 4 egg shaped (4x6) tin-like pans (bought it at my local Asian market) 2)Placed the tin pans directly on the stove and melted 1/4 cup sugar in each tin. Make sure to move around the sugar while its melting. 3)Take tin off the heat when sugar is melted and lightly browned, and cool for 15 minutes. The sugar should harden and you should hear the sugar cracking. 4)I didn't bake it, but plcaed it a large steamer on the stove for 1 hour because that's how my mom makes regular flan. It turned out delicious and everyone liked it, but I still prefer the original.

Shrimp Scampi Bake

Perfect! I used the amount of butter in the recipe and it was just right. I served over a package of linguine noodles. Just make sure to check on the shrimp while baking so it doesn't over cook. Quick and easy and will make again.

Banana Crumb Muffins

Very moist!! I substituted the butter for oil as many people did. But for some reason I did find the muffin a bit too sweet for my taste. Maybe it's because I used dark brown sugar. But next time I will use only 1/2 cup of sugar and use light brown sugar instead. Even if it was a bit too sweet, I still enjoyed them and will continue to make more of them.

Szechwan Shrimp

Loved this! I would add more water because sauce thickened up too quickly and I like letting the sauce boil for a couple of minutes before serving. I doubled the sauce and used 1 lb shrimp. I would like a little more spicyness so next time I'll try more crushed red pepper.

Slow Cooker Roast Beef

This is great. There was a lot of sauce left so I didn't need all of it. I just throw away what I don't need. Then I thicken up the rest w/ cornstartch to make a nice gravy. I put this in the slow cooker for 5 hours on high and it was moist and delicious. Thanks!

Four Cheese Macaroni

I used 1/2 cup each of Monterey Jack, Pepper Jack, Mild Cheddar, and Sharp Cheddar. Used 3/4 cup of heavy cream and 1 cup of milk since I didn't have any half-n-half. Next time will only used 1 egg instead of 2 as it was slightly dry but still good. Also added breadcrumbs with the topped cheese mixture. Next time will experiment w/ different cheeses and probably add some crispy bacon on top.

Heavenly Halibut

This was cheesy and creamy. I chose to bake instead of broil it. I baked it for 15 minutes on 375 and it turned out perfect. I didn't have enough parma cheese so I used some cheddar cheese I had left over. Served with mash potatoes.

White Chocolate Raspberry Cheesecake

I'm not much of a baker. Picked up an oreo pre-made crust and baked in over for 20 minutes then placed in fridge overnight. Delicious! Next time I will add another 1/2 cup or more of rasberries and 1/2 cup of white chocolate. I love whilte chocolate and the flavor was very subtle in the cheesecake. But this was very rich yet creamy. Will definitely make again.

Delicious Ham and Potato Soup

This was really good, but a little too salty. I used leftover ham from new years. I will use unsalted butter next time. It also turned out less thick that I would like it to be, so I'm going to try to make the butter/flour mixture thicker than I did before. But overall, it is a delicious soup!
