Farro Salad with Asparagus and Parmesan

We thought this was pretty good. The only substitution I made was almonds for walnuts. Next time, I would probably cut the cranberries by half. It just made it a little too sweet.

Rubbed and Grilled Pork Loin

Husband and I agree, Best Pork Loin we've had in our lives! So delicious and perfectly moist! Followed the recipe exactly other than using a smaller roast for our 5 person family. Delicious!

Extreme Chocolate Cake

I made this recipe for a fancy birthday cake and at first I was really skeptical. The batter was SOOooo runny. Several reviews had talked about the same issue, but it was even more than I expected. HOWEVER, it baked up beautifully. It didn't get a rounded top like most baked items, but that was great for me because I didn't have to level off the cakes to layer them. They were nice and flat and uniform. I didn't make the frosting, but by looking at the recipe, I would think it would be way too sweet for how sweet the cake already is. I made buttercream for the birthday cake, but I think even cool whip would suffice.

Goulash Supreme

It was a cheap easy meal that filled our bellies. Other than that though, it was not anything to rave about. I cooked the pasta separately and added a few more spices and it was still bland. We are happy to be full, but I won't be making this for company.

Cha Cha's White Chicken Chili

The only reason that this doesn't get five stars is because as is it is too spicy! And don't get me wrong, we like spicy, but this is too much. With some alterations, this is definitely a five star.

Raspberry and Almond Shortbread Thumbprints

Refrigerate the dough! It makes all the difference. I used orange marmalade and green cake gel to make little pumpkin cookies for my daughter's preschool. So cute!

Catherine's Spicy Chicken Soup

So delicious. The only thing I did different was added Rotel instead of salsa because I didn't have any and made it in the crockpot. Turned out great! I halved the recipe and we had plenty for the four of us and some left overs for the next day. What a treat. I'll be keeping this recipe around, that's for sure!

Baked Oatmeal II

I've never had anything like this before, so I made this recipe just to try it out since I had all the ingredients on hand. Its tasty, but strange. I'm sure we'll eat it all, but I don't know if I will ever make it again. Not that its bad, I think I would just rather have a granola bar or an oatmeal cookie.

Quick and Easy Green Chile Chicken Enchilada Casserole

Really like the base recipe. I spice it up quite a bit by adding taco seasoning and green chilies to the chicken. Very yummy. Quick and easy. Also I just tore the tortillas into pieces and didn't have any problem with it being to runny or the tortillas being to too dry. Delicious.

Peanut Butter Bars I

I wasn't really impressed with the recipe and neither were my guests. It tasted like a brick of peanut butter and chocolate. It was sweet and I love chocolate with peanut butter but it was a little too rich. If you make this make sure to cut into small squares - like you would with fudge.

Cheesy Chicken Florentine

This recipe is delicious! I've made it several times according to the recipe and I've found that a few small changes help tremendously. First I brown the chicken on both sides (not cooking all the way through) and put that on top of the rice mixture along with the bread crumbs and cover with foil instead of putting the rice in by itself. After 25 minutes I take the foil off and cook the rest of the way. Also I use Italian flavored bread crumbs, which kick it up a notch. The last thing is I substitute brown rice and you can hardly tell the difference. Very delicious recipe! Thank you!

Florentine Crepe Cups

Very delicious! I did change a few things though. I didn't have any mayo so I just left it out and added another egg instead. I also sauteed fresh mushrooms with some onion in the bacon grease to add more flavor and to soften up the mushrooms. One last thing was I added garlic salt to the filing to again flavor it up a bit. This recipe is a little time consuming, but yummy, pretty, and worth it. Thanks!

Easy OREO Truffles

These are so good! I used white chocolate almond bark instead of melting the baking chocolate because its easier I think. It made quite a few and after our get together they were all gone. So delicious. If you're an Oreo fan you'll love these.
