Sam's Famous Carrot Cake
Just Perfect..In my opinion...I loved it, however, my husband mentioned that its like a sponge cake instead of a "cake" so he was not as thrilled. I do see what he means as the consistency is not flaky or crumbly as a cake. He loves the Bakers Square carrot cake, which I cant stand. I did drain the pineapple and carrots and did not include coconut flakes since I really dont like them. I will make this again (for me & kids:) Do use the cream cheese II from this site. Soo good

Braised Chicken Breasts in Tasty Mirepoix Ragout
I am giving this receipe five stars because it was very good THE DAY AFTER for leftovers. I initially followed the recipe to the T (I did not use salt at all based on the reviews and simply used swansons chicken broth, the full amt. called for in the recipe) and ended up with a soup/broth like consistency which with mashed potatoes, was a bit strange to eat, yet the flavor was good. I cooked for a total of 2.5 hours and hoped that the flour used in browning the chicken would thicken the broth but it did not happen. HOWEVER, when I warmed this up in the oven the day after, the onions seemed to evaporate into the broth and glazed into a nice gravy which was soo good with the potatoes. Thanks for the recipe..

Southwestern Egg Rolls
Sooo good. I made these with no onions and baked them for 12 min at 450. I did come up with exactly five egg rolls. They were gone! I was waiting for one of my girls to not be able to finish the whole thing, but no such luck. I had to split one with my husband. Definitely will have to triple this recipe. Thanks for sharing!
