Buttermilk Pancakes II
This is a great buttermilk pancake! It's the perfect balance of fluffy and dense and the flavor is great. We used 2 cups of buttermilk because we only had a pint and 1 cup of whole milk instead of the 1/2 cup called for to make up for the buttermilk we left out. It turned out really well. We also put some blueberries in while the batter was cooking. Yum!

Clone of a Cinnabon
I've made these twice now and I guess it's time to add my own praise to the 4500+ positive reviews! These are the ultimate cinnamon roll! Great texture, great size, perfect amount of sweetness, and really? Is there anything better than a fresh from the oven, homemade cinnamon roll?! I did adapt this recipe to be made using a KitchenAid mixer as I don't have a bread machine. It's not hard at all to do it without a bread machine. I made these up to the baking point on Christmas Eve and we baked them off and ate them on Christmas morning. After putting the rolls in the pan I covered them with plastic wrap and put them in the fridge. I pulled them out and set them on the counter 30mins-1hr before I wanted to bake them and then baked them for 20-25mins at 350 (the first time I made these I baked for 15mins at 400 as the recipe calls for and they didn't bake evenly, definitely go with the lower temp! I did take 1/2 a star away for this as my rolls were under baked in the middle the first time I made them because of this.). The only other change I made was to change the proportions of the cream cheese frosting a bit. The first time I made the rolls I made the frosting as written and didn't love it. I much preferred the frosting I made this time (I took another 1/2 a star off because of this) where I used 4oz of cream cheese rather than 3oz. And don't forget to flip the pan over after it comes out! Other than those two things this recipe is perfection!

Great recipe! I followed the recipe as written with the exception of the raisins. Instead of raisins I spread the dough with apricot preserves before adding the sugar/cinnamon/nut mixture, which was very tasty! The dough is phenomenal though! Flaky and buttery and just as it should be. Thanks for a great recipe!
