Jamaican Tortilla Soup

Oh my gosh. Tell me JMJ...is this recipe like the Rumbi Island Grill tortilla soup?? I haven't been near a Rumbi's in over a year and CRAVE that soup. I just noticed that this recipe is extremely similar to the copycat recipe I have (sans cilantro). Living in Utah, I imagine you may know. I'm going to try this in the next week. If it is, you have saved my life!

Cranberry Chicken I

Okay, here's the problem I have with this recipe. A friend of mine gave me this recipe without the onion soup packet, whole canned cranberries instead of jellied, added pecans and baked it in the oven. It was WONDERFUL. I tried it this way yesterday. It tasted exactly the same with one exception. You know that onion taste that you can't get out of your mouth no matter how much you brush, floss, or pik? Stayed with me through today. I would definitely make this, taking out the onion soup mix and adding pecans. I love it with rice.

Chicken Tikka Masala

This is REALLY, REALLY good! I make it mostly for when company comes over because it seems like a lot of work. Today however, I really wanted it but didn't want the trouble so I bought a jarred Tikka Masala sauce. YUK. I threw the jar out and decided to follow this recipe, but instead of marinating the chicken (no time...) I diced the chicken and added the marinade ingredients, stirred it up a bit and threw it into a skillet. I added the remaining ingredients when the chicken was almost done. WOW! It was just as good this way, possibly even better since the chicken was more moist. I did end up substituting sour cream for yogurt because I didn't have any, but I would stick to the yogurt next time. Other than that, this will be the way I make it from now on. Oh! And I always double the sauce ingredients.

Slow-Cooker Chicken Tortilla Soup

This was a good start, however I found it a little bland. I ran out to the grocery store and picked up a package of Knorr spanish rice, cooked the rice in a separate saucepan and added it into the crockpot. I suppose I could have just tossed the rice right into the crockpot and cooked it from there but that would have been too easy. ANYWAY, it was really, really good after that. I'll definitely make this A LOT. I also used frozen, uncooked chicken and I added a can of pinto beans.

Slow Cooker London Broil

UGH. This was disgusting. I can't figure out the high rating for this at all. The house smelled great and we were excited to try it. We're not picky eaters at all and experiment with different recipes frequently, but this horrible. It was tasteless beef soaked with tomato soup; that's it. We're on our way out the door right now to pick up some take-out. Yeah...I'd rather eat take-out than this.

Chicken Pot Pie IX

I've never had a better pot pie! This is truly amazing. I added 1/2 tsp of poultry seasoning and 1/4 tsp garlic salt to the sauce. This is going to be made a lot in our house!

Stuffed Green Peppers I

These were honestly the BEST stuffed peppers I have ever had. There really isn't much else to say! I LOVE them. I did use 2% reduced fat cheddar, Healthy Request tomato soup, and extra lean (96%) ground beef. YUM!!

Salsa Chicken Burrito Filling

This was good. I'll definitely be making this again, however, I doubled the recipe and had a feeling that 2 taco seasoning packets would be too much, so I used 1 and a half. When it was finished, my husband thought there was STILL too much taco seasoning in it. I guess the next time I make this I'll still only use 1. I also used less pepper than called for (I don't like spicy). Really good!!

Unbelievable Chicken

Yummy, yummy, yummy!! I couldn't find Coarse mustard so I used ground. I cut the chicken into chunks, marinated it for over 24 hours and skewered them. I didn't have the ingredients for kabobs, so we just ate it as is, with rice and veggis. I REALLY wish we had made MUCH more chicken with this. I only used 4 breasts, since it's myself, husband and two little ones-- there were no leftovers. I'm making this next time we have company!

Easy Mushroom Rice

This was really really good! I didn't use as much butter as it called for and it still turned out great. I live at 7500 ft and cooked the rice for a little over an hour. I also added about 1/2 cup of water during the last 15 minutes of the cooking time due to my high altitude. My kids and husband loved it. Sure to replace boxed rices!

Gypsy Soup

VERY good! I added 1 lb extra lean ground beef, precooked, just before the tomatoes and beans go in and we substituted soy sauce for the tamari. My husband added some curry powder to his bowl and also a tablespoon of sour cream. It was so good when I tried his that I did the same. YUMMY!! This is going to be made VERY often in my house. Ten, 1 cup servings made this (with the 96% lean beef) 203 calories a serving.

Mulligatawny Soup I

This was soooo good!! We used 2% milk instead of cream and split the soup into 5 servings at 165 calories a serving. I'm so happy I made it...it's a keeper!
