Campbell's Kitchen Creamy Chicken Enchiladas

Reviewed: Nov. 7, 2008
I give it 5 stars simply because it was tasty, everyone enjoyed it and most importantly....it was QUICK! I have made several different enchilada recipes and while they are good none are as easy as this one. Very kid friendly...my picky eaters even asked for seconds which is rare in this house.

Flavorful Beef Stir-Fry

Reviewed: Oct. 1, 2008
What a great recipe! Tastes like you ordered it from a chinese restaurant. My husband is so picky and really not much of a veggie eater and he raved about this. My two young kids also loved this. I served my stirfry over rice stirfry noodles. Thank you, thank you for this recipe!

Roasted Asparagus With Thyme

Reviewed: May 29, 2008
I made this last night and was very happy with the results. I was disappointed that my grocery store was all of out fresh thyme, so I had to use dried and it was still good though I know would be better with the fresh. I also added in the last five minutes of cooking a sprinkling of shredded parmesan cheese. Very Tasty!

Tomato Corn Salad

Reviewed: May 29, 2008
I tried this recipe and was sadly a bit dissapointed. It may just be my own personal taste but no one in my family liked it. I did use and this may be where I went wrong, the Good Seasons Italian dressing, the kind you make yourself. The taste may have been better with regular bottled Italian dressing.

Baked Haddock

Reviewed: May 9, 2008
So, I had never cooked fish before (weird I know). However, I had my grandfather and a few family members over for dinner and fish is my grandfathers favorite, so I decided to make it happen. This recipe was so easy to make it was almost foolproof. I used shredded parmesan and added some salt and pepper to the bread crumb mixture. I also squeezed on some fresh lemon after the milk but before dipping in the crumbs. It was such a hit there were no leftovers, even my one year old devored it. Thanks for the recipe.

Old-Fashioned Potato Soup

Reviewed: Apr. 9, 2008
I love this recipe. I have made it many times. The only advice that I can offer is if using dried thyme make sure you us the exact measurement don't just guess, if you use too much it will make the soup taste strange, I often use fresh thyme with great success. I like to add more carrots than the soup calls for to add color. Great recipe, definately helps warm up a cold winter night.

Chicken Spaghetti Casserole I

Reviewed: Mar. 5, 2008
This recipe was good. I omitted the pimentos and used a green pepper instead. I also used one can of cream of mushroom and one can of cream of chicken as suggested as others suggested and used chicken broth intead of the wine. I liked that it was a quick recipe that could be made ahead of time and then popped into the oven when it was time to eat. I will make this again.

Garlic Red Potatoes

Reviewed: Feb. 8, 2008
This was a great side dish. We all enjoyed them. I agree with the longer cooking time and I also broiled mine a bit at the end to make them a little crunchy. Will make this again but I think it needs a little more spice...maybe a packet of the dry ranch dressing or some other spices.

Mouth-Watering Stuffed Mushrooms

Reviewed: Feb. 6, 2008
These were great! I made them for a birthday party and I only got to have one before they were all gone. I like that it is different from your standard stuffed mushroom w/ the bread crumbs. I took others advise and used a freezer bag to pipe the filling...it made it quick and easy with little mess. Everyone asked for the recipe...will definately make this again...and again :)

Cha Cha's White Chicken Chili

Reviewed: Feb. 6, 2008
I made this for my son's birthday this weekend. I got rave reviews...it is definately a nice change from a standard chili. I made the soup the night before and added everything but the cheese. Once it was heated through, I put in refridgerator and then in the morning I put everything in a crockpot added the cheese and heated until cheese had melted. I will definately make this again.

Canadian Barn BBQ Sauce

Reviewed: Jan. 30, 2008
This is a great recipe, I have been using it for years now. I make no modifications as my family has a bit of a sweet tooth and you MUST make sure the cinnamon and lemon juice are in it. I don't know how many people I have given the recipe to and they omitted those two things because they thought it was weird and in the end it was no good. I am excited to try this on chicken now!

Chinese Noodle Chicken

Reviewed: Jan. 17, 2008
This was a great dish, I think next time will try making my own sauce as the store bought was a little too sweet. I also have already bought some stirfry beef and I am going to tr it with tha next. I used all different kinds of veggies (broccoli, carrots, red&green peppers, pea pods, mushrooms) and found some stirfry noodles in the Oriental section of the grocery store. Everyone liked it and it was quick and easy to make.

German Sweet Chocolate Pie

Reviewed: Dec. 19, 2007
This was so good and incredibly easy to make which is good because I tend to not be a great baker. I used skim milk, fat free whipped topping and light cream cheese in a reduced fat graham cracker crust and you would NEVER know. It was that good. I have made this twice now and I think that it tastes the best completely frozen but definitely not bad when it has thawed either.

Very Cherry Crescent Ring

Reviewed: Dec. 6, 2007
Personally I have never made this however, my mother in law makes it every year for Christmas. It is amazing and there is never any left over. Once you make this it is sure to be a family favorite. I believe that she substitutes the pecans for walnuts.

Chicken Noodle Soup

Reviewed: Dec. 5, 2007
If you are looking for a quick and easy but still homemade soup this is it. I have made this soup so many times for family and friends when they are sick that people are actually requesting it! I like to bake the chicken with some Natures Seasoning and also substitute four cups of water w/ two cans of Chicken Broth, then I add some boullion cubes w/ the rest of the water. I give this recipe 5 stars because I have found no one who doesn't enjoy it.

Wild Rice and Ham Casserole

Reviewed: Nov. 29, 2007
This was a huge hit in our house.....my four year old gobbled it up and even my 9 month old kept having to have a taste. Instead of the broccoli, I added frozen peas and carrots and I also only used half of the mayonnaise and it was still very creamy. This is a quick and easy recipe to use up left over ham.
