Cajun Chicken Pasta

Great recipe and very easy. I used Portabella s and added sliced zucchini. I also used fresh lemon juice,garlic basil and farfalle instead of linguine. I really enjoyed this.Thanks

Cinnamon Streusel Orange Muffins

I wasn't crazy about these muffins. They were kind of dry and the orange flavor just wasn't there.I mixed orange juice concentrate with some OJ instead of just OJ. I also added some orange zest but that didn't help. I may try these again and add some orange extract for flavor.

Caramelized Onion and Blue Cheese Orzo

I just tried this recipe with garlic and herb feta cheese and I like it much better with the feta.I guess I'm not a big fan of blue cheese but the rest of the recipe is great.

Creamy Caramel Flan

This has a very nice texture. It is very dense and more like cheesecake which I like. I did have a few problems though. I can't melt sugar and make caramel. I used a recipe that calls for 2 cups of sugar and 3/4 cup of water and cooked that and made beautiful caramel. Just a reminder to others, make sure all your ingerdients are at room temp. not just the cream cheese.

Breaded Chicken Fingers

I made these for my son and he liked them. I made a few additions like I usually do. I added some cayenne pepper to the buttermilk and bread crumb mixture. I also added some poultry seasoning to the bread crumbs. Next time I will double dip them as others have suggested. I cooked them in a deep fryer and they were crunchy but I like a lot of breading. I will continue to use this recipe.

Chili Potato Burritos

I liked this recipe. I made a few minor changes. I put 4 cloves of garlic in with my potatoes when I boiled them and then put it through a ricer. I also added some butter, extra chili powder & cumin. I used pepper jack cheese, green onions and corn. I love potatoes so this was a good recipe for me.

Cuban Beef Stew

I don't normally like beef stew but this was delicious. I did make a couple of substitutions. I didn't have dry sherry so I used beef broth and some dry white wine. I added carrots but left out the raisins because I don't like them at all. I have to agree with the other reviewer that the flavors come together beautifully. Next time I will use the sherry, but either way this is a winner.

Wisconsin Cheese Soup II

Easy Cocoa Ice Cream

This ice cream is easy and delicious. This is the first recipe I tried with my new ice cream maker and I'm so glad I did . My son just loved it and his usual favorite is vanilla. Thanks Hershey's Kitchens

New York Cheesecake III

I really liked this cheesecake. I added a little vanilla like the others. The crust was good but anything is better than graham ers. I thought the preparation was simple enough. I didn't have a problem with it ing. I did put a pan of water in the oven to help prevent that. For the person who had a problem with the springform pan leaking, make sure your crust is slightly pressed up the side of the pan just above where the pan comes together. You can also wrap aluminum foil around the bottom of the pan to prevent it from leaking all over the oven.

Real N'awlins Muffuletta

I have to say that I don't like olives at all but I wanted to try a real Muffuletta. I also have to say this is the best sandwich. The flavors were terrific. I took this to a Christmas party at work and everyone there also loved it. For those of you like me who don't like olives you have to try this. The flavors really blend and the olive taste isn't overpowering. 5+ stars. Thanks

Spinach Stuffed Chicken Breasts

This is the best chicken recipe I have ever had. I did make a few changes. I used 1 1/2 oz. of cream cheese, 1/4 cup of mayo. and garlic and herb feta cheese. This gave it terrific flavor. I also covered the chicken completely with the bacon. I baked them for 45 min covered then I uncovered them for 15 min to crisp the bacon slightly. I also made a roasted red pepper sauce to go over it. This was very moist. I think the bacon helped keep it that way. I will make this again and again.

Barbecued Beef

I made this today and it was very good. I did make a few changes. I used chili sauce instead of ketchup and I added some cayenne pepper.The sauce was very thin so at the end while I was shredding the beef I transferred the sauce to a pot and reduced it on the stove.I then put everything back into the slow cooker until my guests arrived. Everyone enjoyed it.

Sicilian Ricotta Cheesecake

My uncle use to made a ricotta cheesecake that I loved but I never got the recipe from him. I thought I would give this a try. I did leave out the orange zest, cinnamon and reduced the vanilla. I then substituted approx. 3 tsp of Amaretto and it tasted just like my uncles recipe. It did take a littele longer to bake than stated but it was very easy to make.

Cheddar Quiche

I made this for my mother for breakfast and she loved it. I cooked my bacon then crumbled it . I then cooked onion and red bell pepper in a small amount of the bacon grease. I also used extra sharp cheddar cheese. I thought this was a great recipe. I enjoyed the bisquick crust because I cant make pie crust and I don't like frozen.Thanks for the recipe.

Spanish Rice II

I was looking for a basic spanish rice recipe. I did substitue canned enchilada sauce for the water. I also decreased the amount of salt and chili powder slightly and added black beans and corn at the end. This is a complete meal for me. I really enjoyed it.

Cajun Style Meatloaf
