Grandma's Corn Pudding

taking some tweaking, started with basic recipe, added 1/4 tsp cayenne pepper, used frozen corn with jalapeno pepper, 4 eggs, not 5, substituted sour cream for milk, added 1 cup of shredded sharp cheddar. was a hit today but I will continue to tweak, actually want to switch to 9x9" glass casserole vs. 9x13, looking for more moisture - a blend of 'pudding' and 'souffle'

Spinach Quiche

Tweeked somewhat to what I had on hand. Used no butter. Sauteed 1/2 lb fresh mushrooms with sliced green onions and garlic. Added 1 lb of fresh spinach and black pepper. No salt needed with Feta. Let drain in a mesh colander about an hour. Beat 3 eggs with 1/2 c. milk, added the feta and mozzarella cheese. Baked the crust for seven minutes. Combined spinach mixture with egg mix and filled deep dish shell perfectly. Baked until golden topped with more mozzarella - baked until melted. Fantastic!! My husband and I really enjoyed this and it will be in our regular rotation.

Colleen's Slow Cooker Jambalaya

Delicious! Wanted a good recipe for Jambalaya that I could adjust for a low sodium diet. This worked great. Added the shrimp at the end along with precooked brown rice - just needed a few minutes to warm through. Didn't have andouille, subbed organic kielbasa instead. Perfect - thanks so much for sharing!

Rhubarb Steak Sauce

revised slightly - used sugar in the raw - just one cup which was PLENTY. Added 1 tsp crushed red pepper flakes for zip, a few tbsps. of garlic & 1 can tomato paste. - Simmered for a few hours (I forgot about it) - tasty & zippy!

delicious! first attempt at making pickles and they turned out great! cut the sugar WAY back - 1 tsp. per batch of brine. I made 9 quarts - quadrupled the recipe and brine qty. came out perfect!

Strawberry Spinach Salad I

Delicious with some modifications - way too much olive oil! I made the dressing and then wound up skimming about 1/2 of the oil off - a few tablespoons to bind the dressing to the spinach would suffice. Used balsamic vinegar instead of white. Left out the onion, sesame seeds and poppy seeds as I had none. Added LOTS of cracked pepper for zip. Very good!!

Bloody Mary Short Ribs

use ingredients as directed but tossed it all in the crock pot for the day - added garlic and some cumin. super tender but it needed something - not sure what - a little on the sweet side - could have been the bloody mary mix I used - might try a zippier version next time - and there will be a next time!

Chicken and Corn Chili

very good! I used 8 frozen chicken breasts, more than doubled the spices, one can of mexicorn, one can of regular corn, 2 cans of black beans, one can of diced tomatoes and a large jar of medium heat salsa. Shredded the chicken and served as chili day one and made tacos with it on day two.

Slow Cooker Stuffing

Stuffing was a hit on Thanksgiving. This was my first attempt at making stuffing and it came out great. I used just poulty seasoning and sage for the spices as that is what I had on hand and omitted the eggs. I added about a cup of walnuts for extra crunch and added broth over the course of the day as needed. Cooked all day on low and it was great. You do have to watch it as even on low it will burn - just pull from the sides of the crockpot and pour in a little more broth.

very tasty - nice change - used french & sourdough bread cubes for dipping as well as honey crisp apples - nice combination. I would say that the recipe, as stated, will NOT feed 10 as a meal.

Dog Treats I

Dogs enjoyed these very much. I doubled the recipe and I made about 150 cookies using a 3" dog bone cutter and rolling my dough to 1/8" to 1/4" thick. Not necessary to grease the pans or to space the cookies - they do not spread. I substituted boiling beef broth for the boiling water and omitted the bouillion for less sodium. I also turned the cookies once the bottoms were browned for even color and crispness. Thanks for sharing!!
