Spinach Cheese Pie

Like most other readers I removed the second pie crust, making it more of a quiche. I also removed half of the cheese, added three beaten eggs and mixed in some sauteed onions, mushrooms and garlic. The result was delicious, I will definitely make this again

Slow Cooker Spaghetti Sauce II

This recipe is absolutely fantastic. We're a small family so I halved it, doubled the garlic and the seasoning, added a couple of small hot sausages and threw a bay leaf into the slow-cooker for good measure; we had delicious leftovers for days

Walnut-Crunch Pumpkin Pie

Excellent recipe, I replaced the evaporated milk with 1/2 cup whole milk though and used a mix of 1/3 cup brown sugar and 1/3 cup granulated sugar instead of the 3/4 cup brown sugar. I also started the oven at 350 degrees, cooked for 40 minutes pre-topping and 25 minutes post-topping, no broiling, no temperature change. It came out fabulous

Basic Crepes

Amazing crepes, however, definitely mix the liquid ingredients separately before adding the flour. I've made this with soy milk instead of regular; I've also added vanilla, cinnamon and nutmeg to it with delicious results.

Linda's Lasagna

I make this recipe every couple of months as a treat for my boyfriend or whoever might be coming over. It's delicious! In a pinch don't worry about using the pre-cooked lasagna noodles, they work fine in this recipe. I always add a few cloves of fresh garlic to the meat though and replace the cottage cheese with ricotta. I also add dried thyme to the ricotta/egg mix to give it some extra flavor. It always comes out fantastic and friends and family think I have some secret family recipe up my sleeve

Basic Corn Muffins

This is a fantastic recipe. When I first tried it though the corn muffins were pretty tiny in my standard pan so I increased the yield to nine muffins worth of batter (using one whole egg) for a six muffin pan, the results were perfect, not a drop of overflow. I also added cinnamon, vanilla and occasionally substituted vanilla soymilk for the milk, delicious!

Cranberry White Chocolate Shortbread

I tried it without white chocolate (not having any immediately available at home) and added a teaspoon of vanilla and a dash of cinnamon. Came out great. Had to leave it cooking for maybe a minute longer than expected but that might just be my oven
