Grandpop's Special Chocolate Cake

I just baked it- great! so moist and wonderful! I baked it for a friend's birthday with vanilla icing and ganache filling. I was a bit worried baking for a friend and trying a new recipe. 1.5 x the recipe to make a triple layer cake. I was a bit worried about the coffee, but it really does enhance the flavour... not coffee tasting at all. I will make it again if I need something simple that I can count on. Thanks!

Whipped Shortbread Cookies

Turned out great, I'm not a shortbread fan but I ate it and enjoyed. I used a pastry bag and made rosettes. Everyone was impressed. Next time I'll drizzle with glaze or chocolate. I could use it being a bit sweeter. Thanks!

Mom's Best Peanut Brittle

I haven't eaten it yet, just finished making it. I used a thermometer and let it bubble FOREVER. It never reached more than 250. So finally I tried the cold water test and bingo. I'm hoping it hardens enough.... Looks good, could've been browner, but one it was spread and thin, it looks good. Fingers crossed....

Mom's Rum Cake

Great cake, I just got back from Jamaica and was desperate for a rum cake. This worked great, everyone loves it! I sprinkled the bottom of the bundt pan with pecans and flaked coconut. Poured in the batter. I inverted it on a fancy cake plate and spooned on the glaze. I added the rum before cooking the glaze. It didn't thicken at all - no matter how long I cooked it, but it seems to crystallize nicely when its on the cake. Its good out of the oven or the next day.

Fluffy Biscuits

Best biscuit recipe I've found. I've basically been spending all this time perfecting and modifying my family's recipes. Why bother when I can come to all recipes and get your all-ready perfected ones. My fiance loves them warm with jam :) I usually make them mini - about 1 1/" diameter.
