Scottish Oat Scones

My boyfriend and I were licking our chops after these! Word to the wise - when adding the butter to the egg/milk mixture, be sure to let it cool a bit. You don't want the egg to start cookin!

Black Bean and Salsa Soup

SUPER simple, fast and delicious. My boyfriend and I loved it and the only change we made was to add more salt. A little tid bit - we used medium salsa and it gave it a good spicy kick that got balanced out from the sour cream. Also, we used fresh salsa instead of the bottled, processed stuff. It work much better for blending.

Sweet Restaurant Slaw

Made this with the recipe called "Slow Cooker Pulled Pork" and put it on top of the pulled pork sandwiches. PERFECTO! The only thing was that I had a lot of extra sauce, so maybe I'll use more cabbage next time.

Slow Cooker Pulled Pork

I ditto many reviews here - this pulled pork was made for a group of 15 (I doubled the recipe and it was perfect) and I used pork shoulder for a bit more fat. I didn't rub any seasoning on the pork at any time, and the only thing I did to ensure the root beer was fully soaked in by the pork was to "stab" the pork with a prong. I also turned it once in the middle of the 7 hours. Plus, Sweet Baby Ray's BBQ sauce (original recipe) works GREAT on this stuff!

Szechwan Shrimp

This was delicious, so easy, and the boyfriend loved it. If you don't like spice, just use a pinch of the red chili peppers. The 1/2 teaspoon is pretty spicy, but it meshes with the dish well. No need to use cornstarch if you don't have it - just sprinkle in a 1/2 tsp of flour after pouring the sauce in the pan - just to thicken it up a little bit. Prep time is practically nothing, and the cooking time is only 10 minutes. Perfect, easy, fast, delicious. Goes well over a bed of couscous and with some steamed broccoli.
