Taco Seasoning I

Like many others, I turned to this recipe when I was in the midst of making dinner and discovered I was out of taco seasoning packets. This was so good. I will never go back to the packets again. Made a few tweaks. Loved it! - Mixed with 1 tbsp corn starch - Added 2/3 cup of water after I stirred it in the browned meat - Used with 1 lb of ground turkey (delicious)! - Didn't add any salt, based on feedback it was salty. No problem with salt, unlike the packets. Save yourself the $1 and try this recipe. Couldn't be faster or easier.

Kashmiri Lamb

Great recipe, but the sauce broke for me even though I followed the instructions to a tee. Next time I will try adding the greek yogurt closer to the end and removing it from the heat. Very good flavor even with the broke sauce.

Potato Leek Soup I

Loved this. Skipped the butter and used a little olive oil instead. Also used vegetable broth instead of chicken broth. Very light. Tastes rich and creamy, without the fat!

Sauteed Swiss Chard with Parmesan Cheese

If you have been looking for something to do with swiss card, this recipe is the way to go. I always thought swiss chard was flavorless and boring. Wow this recipe changed my opinion. Now I'm hooked!! The only changes I made were to make it healthier by cutting the fat. I skipped the butter, and only used enough olive oil spray to coat the pan. Have to say, it couldn't have been any more delicious! The fresh grated parm really made the flavors pop.

Spicy Cucumber Soup

This soup was awesome! Wasn't sure if I would like it given some of the mixed reviews. I didn't have any cayenne so I sub'ed a jalepeno. It was def. spicy, but not over the top. I also doubled the recipe and was glad i did. Just as easy to make twice as much, and even then it wasn't a big batch. It all fit in the blender in one batch (I held the top tight to make sure it didn't splash.) I'm trying to cut back on dairy, next time I will sub soy milk and I think it would still be great. This one is a keeper for sure.

Hungarian Mushroom Soup

I'm not a big fan of mushroom soups, but had a big container of mushrooms left over after Thanksgiving to use. I found this recipe and gave it a try. I made a few modications - added carrots along with the onions. I also added 3 cloves of garlic. I didn't have any sour cream in house, so I used some taziki sauce that I had (I thought since it's a yogurt sauce with garlic and dill it would make a good substitute). I was delighted with how this soup came out. I used about 1/8 cup of fresh parsley and that was just about right, much more might start to overpower the flavor. Finally at the end I added a slice of swiss cheese broken up in small pieces, just a touch of extra flavor.
