Pasta with Gorgonzola and Sweet Onion

I topped this with grilled chicken, and served with a salad and crusty bread for company Friday night. Yum, yum, yum, yuuuuummmmm! It wasn't difficult, and everyone raved.

Roasted Loin of Pork with Pan Gravy

This was a really good pork roast recipe. I cut the cayenne by half as some suggested. I cut the oregano a bit and added two fresh sage leaves and a few needles of fresh rosemary. There wasn't enough drippings to make gravy, but that's probably due to the meat I bought more that the recipe. I'll definitely make this again.

Fluffy Peanut Butter Frosting

Just made some cupcakes with mini reece cups added to the batter and was looking for a peanut butter frosting. I cut the recipe in half for a dozen cupcakes but otherwise made it as written. IT's a keeper. It's creamy, spreadable, not too sweet, and an excellent topper to my cupcakes.

Fudge

I've been making this simple recipes for years, with great reviews. The semi-sweet is too dark for me, so I do a 1/2 & 1/2 with milk chocolate and it comes out great. My favorite variation, however, uses white chocolate chips w/a little orange zest added at the beginning, and craisens & almonds stirred in at the end. It's festive, beautiful, and O so good!

Cracked Sugar Cookies I

These were great. A simple, easy to make little cookie that disappears quickly whenever I take them somewhere. I rolled them in red and green colored sugar crystals before baking and they were my to to cookie at Christmas. For Easter I added a little lemon extract and some lemon zest and rolled them in yellow sugar, and I'm going to use red, white and blue sugar and take them for the 4th of July.

Garlic Chicken

I really love this recipe, it's simple, quick, uses stuff I have on hand, and is really tasty. I recommend pounding out the thickest part of the chicken breast to start out so it's an even thickness (it bakes more evenly). I did this this the first time exactly as written, and the second time used pork chops instead of chicken, and added a sprinkle of sage and some black pepper. Either way, it's a definite keeper.

Spaghetti Squash I

I roasted my squash in a 450* oven for 30 minutes, it was perfect. I changed out kalamata olives for the black and added a chopped, roasted red bell pepper. This is an excellent recipe, really very tasty.

Rosemary Roasted Pork Tenderloin

This was excellent! I had some left over homemade apple cider, and used it make a reduction to substitute for the apple juice concentrate, other than that I followed the recipe. The pork was tender, flavorful, perfect.

Sugar-Coated Pecans

This is a wonderful, easy recipe. I used a mix of walnuts and pecans, and used an apple pie spice mix instead of straight cinnamon. Fantastic on their own, but to die for when added to a spinach, dried cranberry, gorgonzola salad with a raspberry vinaigrette dressing

Banana Sour Cream Bread

This bread has a wonderful texture, moist without being too heavy. It was a little too sweet for me, so next time I'll cut back the sugar if I'm such over ripe bananas. Also, it needed to bake for 1.5 hours so a toothpick came out clean.

5 Cup Salad

I love this recipe, took it to a potluck and it was completely gone. The only change I made was to add some crasens I had left over from Christmas baking. Beautiful and yummy.

Herbed Beef Tenderloin

This is a great recipe, very simple, and very tasty. The only reason it's not a 5 star is that the cooking time and serving size are off. It took 65 minutes to cook, and NO WAY does it serve 12 adults. After trimming and cooking that would be two small slices per person, and that's not enough.

Roasted Red Pepper and Tomato Soup

I altered this recipe a bit. I roased the tomatoes with some garlic and the thyme befor adding to the soup. It was a little blah for me, so I added some Italian seasoning toward the end, omitted the sour cream, and topped it with homemade garlic croutons.

Low Carb Cauliflower Leek Soup

I thought this recipe was OK, but just OK. I reduced the stock as other suggested, and omitted the cream because the texture was wonderful so it didn't need the cream to feel velvety. It tasted a little blah, so I added a dash of sage and some thyme. With and without the additions, it was still just OK. I won't make it again.

Sage Pork Chops

Not a good recipe at all! It's much, much, much to salty as written, and the sage flavor overwhelms the taste of the meat. My pork chops were pretty much ruined, and I ended up eating scrambled eggs for dinner.
