Creamy Pineapple Pie

There is nothing particularly wrong with this recipe, but there is nothing that great about it either. I thought the topping was a bit heavier in ratio to the pineapple filling, and would have preferred much more of the latter. The egg/sugar/cream cheese topping almost had a quiche-like quality to it, and overall the entire pie was fairly bland. The recipe would be a lot better if there was more filling, and perhaps an additional fruit (rhubarb or strawberry?).

Crispy Herb Baked Chicken

This is a pretty good recipe, and very easy to prepare. I bought wings so could not remove the skin easily, but thought they were good nonetheless. I might add a little more garlic salt next time for more flavor.

Rhubarb and Strawberry Pie

Delicious! A bit runny if eating right after baking, but all wonderful, fruity pies are like this. Crust protectors are definitely key, although trying to make your own from foil can be frustrating. Stick to the ratio of sugar to flour--don't change a thing!

Chicken Noodle Casserole II

This casserole was fun to make, but sadly came out pretty bland. I would be more liberal with the chili powder and paprika next time, and maybe add cayenne pepper. I split the cheese between monterey jack and american (velveeta), but cheeder or even some pepperjack would have been better. For the bread topping, I actually cubed 2 slices of bread and then filled in the remainder with cracker crumbs and thought that was a great mix--but definitely don't completely nix the bread cubes! Overall, not bad

Puerto Rican Garlic Marinade

This marinade is surprisingly good. I didn't have a chance to marinade it very long, but the taste was pretty flavorful. Great for a quick recipe.

Marinade for Chicken

I didn't think this marinade had much flavor. Probably due to the proportion of vegitable oil. I'd use less next time (if any) and marinade it much longer.

G's Flank Steak Marinade

This was a good recipe. Be sure to marinade a few hours so the steak receives the full flavor. If you don't love ginger consider taking it out so the other flavors will be stronger.

Crispy Fish

I thought this recipe was good, but still lacked just a bit of flavor. Maybe adding lemon pepper instead of ground black pepper, as well as sprinkling a bit of lemon juice on the fish would help. I thought the amount of spice was great, but adding some citrus would be perfect.

Puppy Chow

Yummy, and such a crowd pleaser! I think I used about 7 cups of chex, but at least 8 or 9 cups are needed, otherwise the chocolate has fewer pieces to spread to, and the chex clump up together. Also, using a double boiler might be better to melt the chocolate so it doesn't start to burn as it melts.

Barlow's Blackened Catfish

Delicious!! I wouldn't change a thing about this recipe. The spice is amazing, and although I was a little nervous about the raw smell of catfish the end result was amazing. Just be sure to have the stovetop fan on before pan frying the fish--it gets smokey very quickly and the spices almost get stuck in your lungs!

Creamy Avocado-Ranch Dip

I served this as an appetizer for a family evening, and although some people liked it, I thought the taste could be much improved. Two avocados almost dilute the taste of the ranch flavor, so I would suggest only one avocado. I would also suggest adding more garlic salt, as well as the hot sauce if you like a little zip. The sour cream could also probably be reduced by a third. The serving size is more than plentiful for a medium sized group, and that much sour cream (on top of the cream cheese) is simply not needed.

Creamed Spinach with Jalapenos

I was hoping that this recipe would be good, but unfortunately cannot give a better review. I can't pinpoint what was wrong with it, other than the overall taste was off. I made it for a family dinner, and although a couple people said they liked it, others couldn't get it down.

Cinnamon Focaccia

I'm giving this four stars because I think the recipe will be very good when I make it again, but I used wheat flour which turned out to be a huge mistake. It overwhelmed the cinnamon flavor, and is too "healthy" tasting to be enjoyable. I did, however, cut the recipe in half because 2 pizza-sized focaccias is enough to feed a large gathering rather than a few people.

Spicy Turkey Burgers

This recipe is great! Given I don't love turkey burgers and I hate the crunch of onions and veggies, I was amazed at how much I loved this burger! I didn't use cilantro, and definitely don't think it's needed if you don't liked it. Only one warning--my friend was chopping the chili peppers and then touched her eye, and her entire face and eye became inflamed.

Cocktail Wieners II

I made this recipe for an Oktoberfest party, and everyone loved it. I think using chili sauce instead of cocktail sauce would definitely be good, as the cocktail sauce is a bit strong even with the sweetness of the grape jelly. I think it would also be good to use these wieners for pigs in a blanket, either as a marinade before cooking them, or as a dip on the side.

Beer Dip I

This recipe is good, but not something I could eat consistently due to the heavy cream cheese flavor. That being said, people raved about the recipe. I made it twice in one week; the first time I followed the recipe exactly and found it tasty, but the second time I added some jalapeno and topped with scallions, and liked the added zest even better. I used a hand beater to mix the cream cheese and shredded cheese, and didn't have a problem with lumpiness. I used Miller Lite, and found that to be appealing.

Beef Tenderloin in a Port Shiitake Reduction

This is a very good recipe, but it would be better to have more vegitables, or a bed of rice to complete the meal. For the initial cooking of the meat, I would recommend grilling slightly below desired doneness, as the re-heating at the end does make it a bit darker.

Caribbean Canadian Glazed Chicken

This dish was ok, but the marinade wasn't as strong as I was expecting. I think a more equal ratio of ketchup to rum would be more appealing, and I'm not sure chicken thighs were the best cut of meat.
