Shepherd's Pie VI

This was my first try with shepherd's pie. It tastes simple and was cheap to make. It is pretty heavy, but I guess that's what it is supposed to be. My husband loved it. I did end up dirtying a lot of dishes. This almost seemed like a food you would make for someone with no teeth, since everything is pretty much mashed. I guess I prefer some variety in textures and more seasonings, but maybe this could be tweaked to please both me and the hubby!

All-Day Apple Butter

I cooked this longer than recipe called for, since it didn't seem thick enough. I cut it in half to try it out, which made two 8oz jars full. I like that it made the house smell good and that I knew all the ingredients added (as opposed to stuff in stores.) I am just not sure I'll go to the trouble since I can let the Amish folks do it and buy theirs near here!

Quick and Easy Chicken

Nice quick chicken recipe for a weeknight. I doubled the sauce, per advice from previous reviewers. It was good, but I thought it was much too sweet---closer to a syrup than a sauce. My husband has a sweet tooth and loved the sauce. He said I should make just the sauce to keep on hand for dipping. Next time, though, I will reduce the sugar content when making this again.

Spiced Pecans

This is one of my husband's favorite fair foods in the summer and fall. I got some pecans on sale and wanted to try making these for him at home. I liked that this recipe called for egg white instead of butter. My husband loved these and thought they were quite good. He mentioned they could use a little more sugar, though. He also missed the butter flavor. All in all, it made a terrific batch of nuts. I baked them at 270 degrees and did stir them every 10 minutes---took just a little over an hour.

Roasted Garlic Cauliflower

A very flavorful and healthy take on cauliflower. I normally do not enjoy this vegetable and took a chance with this recipe. Not only did I love it, but my husband (who asked where the melted cheese was) ate two servings of it. This will become a new side vegetable for me to use regularly!

Big Soft Ginger Cookies

I love that these aren't hard like ginger snaps. Yes, there is a lot of butter but you just can't go wrong with these when following the recipe exactly. Definitely a crowd pleaser.

Easy Lemon Cookies

This is a 5-star recipe if you follow the suggestion of other reviewers and use fresh squeezed lemon juice (1 TB.) and 1 tsp. of lemon zest instead of the lemon extract. SOOO good...and very easy to make!

The flavor was pretty good but I couldn't really tell because it was WAY too salty. I even used low sodium soy sauce. I prepared it exactly as directed with just a little more peanut butter.

Baked Chicken Nuggets

Not all that much flavor, but when dipped in sauces like BBQ or honey mustard then it really doesn't matter. I love serving real chicken nuggets to my family, and they love them.
