About this Cook
I am married with two kids. I grew up as an only child with a single mother---one who cooked maybe once or twice a year. I ate fast food, frozen dinners, and anything out of a can. I vowed that I would learn to cook. My favorite thing is to cook for my family and for company. Seeing people enjoy the food I made makes me happy. I still have a lot to learn about cooking. Now, though, the kitchen no longer terrifies me. I get lost in chopping, simmering, and smelling all the great foods that combine to make the house smell good. There is nothing home-ier to me than this.
My favorite things to cook
The slow cooker is my best friend no matter what the season.
My cooking triumphs
Homemade soup (who knew how much better it is than canned?) Meatloaf that my kids actually ask for Learning to use a wide variety of seasonings
My cooking tragedies
Painstakingly chopping vegetables and meat for my first crock pot stew and forgetting to plug it in before leaving in the morning. First time using garlic and I thought one clove was a whole head---the lasagna was inedible and my apartment stunk like garlic for a week.

Easy Broccoli Quiche
Overall, way too salty. I should have known better, but with the butter and cheese additional salt was not necessary. Also, the garlic was a little overpowering---maybe a dash of garlic powder would have been enough. I also thought there was too much butter (there was a shimmery layer of it on top after cooking.) I like the basic idea of this, though, and might make again with some changes.

Catherine's Spicy Chicken Soup
This was delicious! I made it exactly as written but halved the chili powder since 3 TB seemed liked a lot. It was perfect. I also didn't add the sour cream or shredded cheese until dishing the soup in bowls. I will say it made WAY more than 8 servings. We had enough for probably 12 people. I just froze the extra. Terrific recipe!

Jay's Signature Pizza Crust
The good: The taste of the crust was pretty good. It could have been more moist, though. It was also much thicker than I thought it would be--hence after putting on sauce and toppings it was tough to cook through. If I use this again, I would either cut the recipe in half for one pizza OR pre-bake the crust a while before adding toppings. Even after baking for more like 25-30 minutes on my pizza stone the crust was still doughy in the middle.
